This Beef Taco Bowl is perfect for an easy, high protein dinner or lunch meal prep. I’m not a lover of cottage cheese, but blended into a sour cream like sauce it is perfect and quite filling with the roasted potatoes and mince.

Tips & Dietary Needs

  • Protein swap – Feel free to use mince of choice.
  • Don’t like cottage cheese?  If you aren’t concerned about protein, you can just use sour cream instead of making the sauce.
  • Dairy-free – Silken tofu works in place of cottage cheese or use dairy-free sour cream
  • Low carb – Replace potato with cauliflower.
  • Lower calorie – Replace avocado with cucumber. Use lean mince like chicken mince.
  • Paleo – Replace cottage cheese with dairy-free Greek yoghurt with some salt added. Replace potato with cauliflower or zucchini.
  • Go veggie – Replace mince with plant mince or smashed tinned black beans.
  • Low Fodmap – Omit garlic powder. Use garlic infused olive oil and replace onion with chopped spring onion (green part only). Use lactose-free cottage cheese. Replace avocado with cucumber.

How to Cook

  1. Crisp potatoes in air fryer or oven.
  2. Cook your mince with spices.
  3. Make sour cream sauce.
  4. Make avocado salsa.
  5. Assemble in bowl.

How to Serve

  • Toppings – Top with fresh coriander, fresh lime and pickled onion if desired.
  • What to serve with –  Serve in a bowl, you can bulk it up further with some shredded lettuce.

Storage & Meal Prep

  • Fridge – Store in the fridge for 2-3 days. 
  • Freezer – The mince is freezer friendly.
  • Make ahead – freeze mince cooked for up to three months.
  • Lunchbox win – perfect for school or work lunches.

FAQs

What if I don’t like cottage cheese?
The idea is that the cottage cheese is transformed to be more of a sour cream to mix through your Mexican spiced taco mince and fresh salsa. If you don’t care about calories or the protein, you can simply replace the sour cream sauce with actual sour cream.

Why can’t I brown the mince in the Thermomix?
You can brown it in batches if you wish but it is just easier and a far better result/texture to pan-fry it.
