If you’ve been scrolling Tiktok or Instagram lately, you would’ve seen that viral pickle dip everywhere.
I kept seeing it pop up… over and over… and I won’t lie, I really wanted to try it. You know when something just gets stuck in your head and you need to make it?
That was this.
We’ve been madly test cooking and planning for our Thermomix cooking class in Dallas Texas this week… and I knew we needed a dip. Something easy. Something people would actually make again at home. And something that works every single time in the Thermomix.
So this just made sense.
It’s creamy, tangy, salty… and a little bit addictive. Exactly what you want in a dip. And it comes together so quickly, which is always a win when you’re cooking for a group.
This is our Skinnymixers version of the viral pickle dip. Simple ingredients, big flavour, and no overthinking it.
It was a hit with the recipe testing team… and honestly, it’s one of those recipes that disappears way faster than you expect.

Ingredients
- 50 g cheddar cheese - cubed small
- 200 g dill pickles - cut into chunks, pat dry
- 200-250 g Philadelphia cream cheese - room temp - cut into chunks (or half cottage cheese)
- 100 g sour cream - or Greek Yoghurt
- 30 g pickle juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried dill
- 1 tsp Chicken Stock Concentrate - - or 1/2 tsp chicken stock powder
To Serve
- 40 g lean bacon bits - optional
Instructions
Thermo cooker
- Add cheddar to mixer bowl. Chop for 5 sec/speed 6/MC on. Scrape down.
- Add pickles and chop for 3 sec/speed 5/MC on. Scrape down.
- Add remaining dip ingredients. Mix for 30 sec/speed 4/MC on.
Conventional
- Grate cheddar and finely chop pickles.
- In a bowl combine dip ingredients.
- Serve immediately and if using bacon, sprinkle on top. Or put it in the fridge to firm up for a few hours.
