I must admit, I was completely daunted at the idea of developing Apricot Chicken as I was unsure how to make it healthy and live up to the nostalgia that people have surrounding this dish, traditionally prepared with tinned apricot nectar and a packet of French Onion soup mix. This tray bake version is not only healthier all round, but it is budget friendly and can be further extended by adding rice while cooking.
