Apricot Chicken was selected as the ‘People’s Choice’ community recipe after I was absolutely inundated with requests for it! I must admit, I was completely daunted at the idea of developing Apricot Chicken as I was unsure how to make it healthy and live up to the nostalgia that people have surrounding this dish, traditionally prepared with tinned apricot nectar and a packet of French Onion soup mix. This tray bake version is not only healthier all round, but it is budget friendly and can be further extended by adding rice while cooking. If you grew up enjoying the classic Apricot Chicken, I hope you find that this Thermomix recipe lives up to your memories.

  1. Made this in the slow cooker as I needed dinner on early. Added broccoli and zucchini 20 minutes before serving. Super kid friendly.

  2. I made this tonight in the slow cooker and loved it. I didn’t like apricot chicken as a child so had never made it. Will definitely make it again. This is the 4th meal I’ve cooked from hm3 and I’ve loved them all. Thanks Nik

  3. Once I got my head around it not tasting like the original apricot chicken I really enjoyed this meal. Not so sickly sweet either. Was a hit on family night.

  4. Such a beautiful meal. Even my ‘you don’t put fruit with meat’ husband ate his serve. I made it in the slow cooker using lovely legs and served it with rice. The flavours were amazing. I would happy make this again!

  5. What an amazing recipe, brings back childhood memories of eating this.. Everyone loved it. I halved the chicken but left everything else the same, served on a bed of mash and a side of veg was the perfect winter night meal 9/10 from miss 8

    Our 9yr old went back for thirds, as did our 7yr old who said at the first mouthful ‘Mum, I don’t like this’..😂 Yeah, ok son… Thanks for another good-choice meal guys.
