Thermomix Apricot Balls

These Thermomix Apricot & Coconut Balls are healthy, lunch box friendly and much cheaper than buying from the shop. Thank you to Katie Thorne for letting us share this delicious and simple recipe. These nut free bliss balls are going to be very popular for school snacks.

Ingredients

  • 50 g sunflower seeds
  • 200 g dried apricots
  • 80 g desiccated coconut plus extra for rolling
  • 2 1/2 Tbsp of psyllium husk
  • 3 Tbsp water
  • 2 Tbsp maple syrup

Instructions

  • Add sunflower seeds to mixer bowl. Mill for 10 sec/speed 9.
  • Add apricots, mix 10 sec/speed 8. Scrape down mixer bowl.
  • Add the remaining ingredients and mix 30 sec/speed 6.
  • Roll into balls and then roll in coconut.

    Not too sweet. Great nut free lunchbox treat.
    I use the Sulphur free apricot and occasionally pepitas instead of sunflower so the colour isnโ€™t as nice but taste is still good.

    Not sure what went wrong here but my girls really didnโ€™t like these.
    I usually make the more traditional apricot balls which they like but unfortunately not these ones.

  4. I made these with half apricot and had dried mango and honey instead of Maple syrup and they are delicious. Thankyou for a great recipe.

  5. Great recipe for lunch box school and work snacks and were so easy to make in the thermie. Was even able to have Miss 2 roll the balls in coconut. Left out the pysillium husks as I didn’t have any in the cupboard and they turned out great anyway. Thanks!

  6. Quick to make and mr 4 was happy to be given the role of ‘Chief Roller of Coconut’ . These are one of his favourite treats.

  7. Accidentally added all the ingredients at once (ie didn’t mill the seeds first) – but they still got a big “YUM” from the turdler that distracted me in the first place- so all good!!

  8. If I donโ€™t have psyllium husk, can I use something else or omit it? Have everything else just canโ€™t be bothered running to shops, sorry.
