Recipe type: Sides
Servings: 4

  • 500 g cauliflower florets roughly chopped
  • 40 g Butter
  • 75 g Philadephia cream cheese softened, (see tips for alternatives)
  • salt and pepper to taste

  • Place chopped cauliflower into TM bowl and turbo pulse 3-4 times.
  • Scrape down sides of bowl.
  • Add butter and cook for 12 min/100ยฐC or 212ยฐF/speed 1/MC on
  • Add cream cheese, salt and pepper and blend for 30 sec/speed 7/MC on

**The cauli mash freezes well.
**DOUBLING THE RECIPE: increase cooking time to 15 minutes and double all ingredients (particularly recommended if using to top a pie)
**Cream cheese can be substituted with cooking cream or coconut cream (for a dairy free version). Sour cream and milk also both work well.
**Different flavours can be added โ€“ try adding garlic, chives or parmesan cheese before blending for an added burst of flavour.

  1. 5 stars
This is my go to side when Iโ€™m watching my carbs and calories! My veg hating partner actually requests this instead of mashed potatoes now!

  2. 5 stars
I cooked this little wonder tonight however I used Marscarpone for the cream cheese. This was only because I had some of this left in the fridge from an earlier risotto recipe and I wanted to use it up. It worked a treat I must say. This recipe was divine. Will make again when I have more cauliflowers and I will try with other cream cheese substitutes in the future (ie. cottage cheese). Thanks for a wonderful recipe.

  3. Honestly the BEST! I never comment and I jusr had too. Am making as we speak, will try garlic in it tonight to mix is up! Thank you

  4. Wow!! First time making cauliflower mash and this recipe is amazing! I made a second batch to freeze. Thank you so much.

  5. Itโ€™s 2019 and Iโ€™ve had my thermomix for around 12 years. This morning I thought Iโ€™d make myself cauliflower mash for breakfast. How have I never done this before? I tried to give my 29yo son a taste as he likes cauliflower but his mouth began getting all saliverie (not in a good way) because he thought it looks too much like the texture of Homous. Oh well more for mummy.

  6. This was also a huge hit in our house – the kids have requested it tomorrow night also! I substituted the cream cheese for cottage cheese. So delicious!

I adore this cauliflower mash. If I have mozzarella in the fridge, I add some of that too. An absolutely gorgeous side, thanks Tanya! X

  7. I cannot believe how easy this is to make and the cream cheese takes the flavour to the next level! This has become a regular (potato/rice/pasta replacement) in our household since we are trying to cut back on carbohydrates. Thanks for sharing.

  8. This is the first time I have EVER commented on a recipe. This was absolutely delicious and SO easy. Definitely a 5 star recipe.

  9. That was delicious!! I put in half sour cream and half cream with parmesan cheese and wow!! Thank you so easy to make.

  10. A definate NO for my kids ๐Ÿ˜” totally lost them with this one – didn’t say it was cauliflower just didn’t like it at all, SORRY

  11. Yum!
This was so good. I am lactose intolerant so didn’t add the cream cheese.
This pairs nicely with the chicken cacciatore in THM2 to make a complete meal.

  12. Wow!!! Even better than mashed potatoes, I didn’t tell my fussy eaters, that it was cauliflower, they all loved it, will be making this ALL THE TIME, thank you!!

  13. Just had this for dinner last night. My potato loving teen thought it was mashed potatoes. Truly an easy & delicious side to accompany any meal.

  14. This recipe is a weekly must for us! It’s a great sub for white sauce in a lasagne, on top of corner bees and works well with frozen cauliflower too!
