📖 Please Note: You will need your copy of the SkinnyEntertaining (SMENT) cookbook for the majority of this week’s delicious recipes! But don’t let the name fool you—while these dishes are impressive enough for guests, they are absolutely perfect for easy, everyday family meals anytime.
Whether you are craving a cozy bowl of comfort or planning a fun “Fakeaway” night, this week’s lineup has something for every mood. Let’s get prepping!
🍽️ The Dinner Lineup
I love breaking the week down into categories. It takes the guesswork out of planning and ensures we aren’t eating the same flavour profiles day after day. Here is what is on the menu for dinner this week:
Something Quick & Creamy: SMENT: Beef Scallopini
Why we love it: Fast, elegant, and incredibly rich in flavour. This dish feels fancy enough for a weekend but is quick enough to pull off on a busy weeknight.
Prep ahead: Slice your beef and prepare the mushrooms ahead of time so it comes together in minutes.
Freezer “Dump Bag” Prep: This is a perfect “Dump Bag” recipe. Use cubed and trimmed gravy beef, doubled. Season meat with salt and pepper. Make the sauce (halve water). Freeze to cook another day. Defrost and cook on low for 7-8 hr. With 30 min to go, stir through cream and cornflour mixture and simmer to thicken with the lid off. Cook mashed potato and beans in the thermo cooker or on the stove top when ready to serve.
Freezer friendly: Portion and freeze off for a quick meal.
A Bowl Something: SMENT: Honey Lemon Wings
Why we love it: Sticky, sweet, and tangy! We love serving these up as a complete bowl meal alongside a quick vegetable stir-fry and fluffy rice to soak up the extra sauce.
Prep ahead: Prepare sauce ahead of time.
Even easier: Replace wings with chicken tenderloins and cook in the oven or air fryer.
Something Saucy: SMENT: Osso Buco
Why we love it: The ultimate low-and-slow comfort food. Melt-in-your-mouth tender meat in a rich, deeply savoury sauce. Serve it loaded with your favourite seasonal vegetables.
Prep ahead: This is a fantastic weekend cook that tastes even better the next day, or prep the elements ready for a slow-cooker day.
Freezer “Dump Bag” Prep: This is a perfect “Dump Bag” recipe. Increase meat to 2.5 kg or 5.5 lb. Omit water. Prepare sauce. Combine meat and sauce to freeze. Defrost and dump in the slow cooker. Cook on low for 7-8 hr.

The Pasta Night: SMENT: Rigatoni Alla Vodka
Why we love it: Vibrant, velvety, and a massive hit with the family. To make this a complete, filling meal, simply stir through some shredded chicken or serve it with your choice of protein on the side.
Prep ahead: You can follow the sauce only variation to add to cooked pasta at a later date. You can even double the sauce only for some extra prep. Portion and freeze the sauce for future quick meals.
Comfort Food Night: SMENT: The Perfect Roast Chicken
Why we love it: Friday night is roast night! Pair this incredibly juicy chicken with the crispy, golden SMENT: Twice Cooked Potatoes and a tray of roasted vegetables for a spectacular family feast.
🥗 Lunch Prep Sorted
A good week relies on solid lunch prep. Having these ready to go stops the midday scramble and keeps you fuelled.
The Fresh Salad: SMENT: Mexican Rice Salad
This salad is bright, colourful, and packed with texture. It holds up beautifully in the fridge for a few days—just add your favourite protein on the side (like leftover roast chicken) before serving.
The Warming Soup: Vegetarian Mulligatawny Soup
A lightly spiced, hearty soup that is absolutely bursting with flavour. Whether you make it in the Thermo cooker or on the stovetop, it’s a fantastic free blog recipe for cozy lunches.

We can’t forget the snacks! Having a mix of sweet and savoury options ready to go is the secret to avoiding the 3:00 PM slump or for when the kids roll in the day after school before heading off to sport/work/study.
The Sweet Treat: Blueberry & Ricotta Mini Pancakes
Why we love them: They are light, naturally sweet, and an absolute favourite for the whole family.
Prep tip: Did you know these freeze beautifully? Cook up a double batch, separate them with baking paper, and freeze them. When the snack craving hits, simply pop a pancake straight from the freezer into the toaster for a quick, warm treat!
The Savoury Hit: SMENT: Sicilian Pizza using SMENT: Pizza Sauce
Thick, pillowy crust with a rich, flavourful sauce. Bake a tray of this, slice it into squares, and you have the ultimate grab-and-go savoury snack that tastes great hot or cold.
Freezer tip: Portion and freeze. Great for snacks or lunchboxes.
