Our new cookbook The Healthy Mix Dinners 4 is full of warming, Slow Cooker friendly recipes perfect for a low effort slow cooked dinner this Winter.

All these recipes are exclusive to the cookbook, however we thought we would make an easy reference guide for everyone who has the book. The following recipes either have Slow Cooker variations written under the recipe in the cookbook or are slow cooker recipes (or find most of them, plus a couple more in the Special Edition – Freezer to Slow Cooker Guide).

Pulled Chicken & Gravy
This Pulled Chicken & Gravy is so fast to make in the Thermomix, but is delicious in the slow cooker too.

Pulled Chicken & Gravy

This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.

You increase the chicken to 1kg, prepare the gravy and pour over. 

Add everything into the slow cooker except the cornflour mixture.

Cook on low for 4-5 hr and with 30 mins to go, shred the chicken and add the cornflour mixture. 

Serve in fresh bread rolls or on some classic mashed potatoes with peas.

Chicken Pizzaiola – All the flavours of a pizza in a healthy, slow-cooked chicken dish.

Chicken Pizzaiola

All the flavours of a supreme pizza in a healthy, one-pot dish! This is a fantastic “dump and go” recipe that is packed with hidden veggies and juicy chicken.

There is a slow cooker variation in the cookbook under the recipe.

You double chicken and vegetables to ensure there is enough volume in your slow cooker.

Cook on low for 4–6 hr

Serve with crusty bread for dipping, roasted potatoes, or over pasta. Top with some fresh basil and mozzarella or cheese of choice if desired.

Chinese Chicken Curry
Forget the local takeaway! This is a mild, fragrant, and deeply comforting curry. Slow cooking the chicken makes it incredibly tender.

I love the simplicity of this curry recipe. It is the type of recipe I like to turn to when I can’t be bothered cooking and need something super easy. This is exactly the type of curry that you can find on a Chinese takeaway shop menu. If you prefer a creamier curry, feel free to replace the water with coconut milk or milk of choice.

The regular recipe in the cookbook is a quick cook, with tips on how to velvet cheaper cuts of pork and keep the meat tender.

There is a slow cooker variation in the cookbook under the recipe.

You increase chicken to 1 kg or 2.2 lb and halve water.

Cook on low for 4–5 hr. With 30 min to go, add peas and cornflour mixture.

Serve with steamed rice or cauliflower rice. Dip roti in if desired!

Creamy Dijon Chicken & Greens

The best part is the silky Dijon sauce that is completely drinkable. It’s definitely a comfort dinner that I’ll continue to come back to, especially served with Silky Sweet Potato Mash!

This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.

You double recipe (except oil and cornflour mixture) and omit water. 
Cook for 4–5 hr on low. With 20 min to go, stir in broccoli, cream and cornflour mixture. Stir through spinach before serving.

Serve with your choice of cauliflower rice, rice or mash.

Hungarian Chicken Paprikash

A classic for a reason. The smoky sweetness of the paprika develops beautifully over several hours, resulting in a rich, vibrant sauce that is begging to be served over some buttered noodles or mash.

It makes a fair bit of sauce and you increase the chicken in the slow cooker to 1 kg

Cook on low for 4 hr.

Serve with pasta, egg noodles, sautéed cabbage, rice or mashed potatoes and vegetables.

Lazy Chicken Lasagna

Yes, you can do lasagna in the slow cooker! This “lazy” version skips the fussy layering and produces a cheesy, saucy masterpiece that the kids will ask for every single week.

This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.

You double the whole recipe (omitting the water) if you like or increase the meat – although you might need to season to taste. 

Cook on low for 3 hr, then on high for 30-45 min with the lasagna sheets and cream.

Serve with a spoonful of creamy cheese in each bowl and swirl through slightly.

Mustard, Honey & Herb Roast Chicken

Who says you need an oven for a roast? Doing your chicken in the slow cooker keeps the meat impossibly moist. A quick flash under the grill at the end gives you that golden skin we all love.

This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.

Add marinated chicken to slow cooker with ½ cup water. Cook on low for 5 hr.

Serve with your favourite roast vegetables or a salad.

Dad’s Fasoulakia

My Dad’s Fasolakia (Greek Bean & Potato Stew)

This recipe is close to Nik’s heart. It’s a humble, traditional Greek dish that proves you don’t need meat to have a filling, soul-warming meal. The potatoes become buttery soft after a long, slow simmer.

This recipe has a slow cooker variation in the cookbook – all instructions are in the cookbook under the recipe.

After sautéing garlic and onion, combine with remaining ingredients in slow cooker. Cook on low for 6–8 hr or until the potatoes and green beans are fork tender.

Serve topped with crumbled feta and crusty bread. It is also a fantastic side dish to serve with grilled lamb or protein of choice.

Rainbow Beef Stir Fry

While usually a fast flash-fry, the beef in this recipe can be slow-cooked to “melt-in-the-mouth” perfection.

Opt for diced gravy beef, double the recipe.

Cook on low for 6–8 hr

Serve with steamed rice, noodles or some crispy noodles.

 

Slow Cooked Lamb & Red Wine Casserole

This is the “King” of slow cooker meals. The red wine reduces into a glossy, dark, rich sauce that clings to the falling-apart lamb. It is the definition of a “hug in a bowl.

Cook on low for 7–8 hr or until tender. In last 15 min, stir in cornflour mixture.

Serve with mash, rice, cauliflower rice or dumplings.

 

Vietnamese Chicken Pho

I don’t think there is anything better than a healing bowl of Chicken Pho when you are feeling under the weather. This recipe has all the goodness from the wings and juices from the chicken to develop the aromatic broth. Don’t skip the toppings though!

After roasting wings and aromatics, add to slow cooker with noodle soup ingredients except noodles. Add just enough water to cover everything (min. 2 L or 2.1 Q). Cook on low for 6–8 hr

Serve bowls of Pho hot with a toppings platter for everyone to make their own bowl.

 

Zuppa Toscana (Italian Sausage Potato Soup)

Inspired by the famous restaurant version, this soup is creamy, salty, and slightly spicy. Slow cooking allows the sausage flavours to meld into the potato base for a truly decadent finish.

Increase potato to 600 g or 21.2 oz.

Cook on low for 5–7 hr. When potatoes are tender, stir in cream and kale, then cook for a further 30 min.

Serve with freshly grated Parmesan cheese and some extra crispy bacon if desired.
