We’ve received a number of recipe requests for a certain discontinued Mustard, Honey & Herb Marinade. This is my version to help transform a simple roast chicken into a flavour sensation. It has a maximum marinade time as using lemon in the marinade will breakdown the texture of the chicken over time.

This Mustard, Honey and Herb Roast Chicken is the kind of dinner that makes the whole house smell incredible — and makes everyone think you’ve spent hours in the kitchen. You haven’t.

Inspired by a supermarket marinade, this homemade version is sticky, savoury, a little sweet, and packed with flavour from simple pantry ingredients. No complicated techniques, no fancy equipment — just marinate the chicken, pop it in the oven, and let it do its thing.

It’s one of the Budget recipes from Dinners 4, which means maximum flavour without blowing the weekly shop.

 

What ingredients you will need

  • apple cider vinegar
  • Dijon mustard – I prefer Maille brand Dijon
  • dried parsley
  • dried rosemary
  • dried thyme
  • fresh lemon juice
  • garlic
  • honey
  • olive oil
  • Stock Concentrate
  • 1 whole chicken or chicken pieces
  • wholegrain mustard

Tips & Dietary Needs

  • Protein swap – I haven’t tried it yet but I’m sure it would be amazing on a roast beef!
  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock. 
  • Go veggie – Use the marinade on tempeh or firm tofu. 
  • Low Fodmap – Replace honey with maple syrup, use garlic infused olive oil and use spring onion (green part only).

How to Cook

  1. This is one of those super easy recipes where you mix the marinade and coat the chicken well.
  2. Allow to marinate for no longer than 8 hr.
  3. Preheat oven and roast chicken until cooked through and skin is crispy. 

How to apply the Marinade to the Roast Chicken

  1. Use your fingers or a teaspoon to gently separate the skin away from the breast of the roast chicken. You don’t want to break the skin.
  2. Using your fingers gently push some of the marinade in between the skin and the breast meat. This will give you maximum flavour and the meat will stay juicy.
  3. Coat the chicken inside and out.
  4. Set aside covered in the fridge.

FAQs

Can I marinate the chicken longer?
The lemon in the marinade starts to breakdown the chicken and changes its texture. We don’t recommend marinating it too long.

Can I use different cuts of chicken?
Absolutely! Just adjust the cooking time to suit.
