THMII: Roast Chicken Dinner with all the Trimmings

I have wanted to write a Roast Chicken recipe for many years now and I have finally created something that I believe people will really love. The highlight of this recipe is the gluten free/low carb stuffing which will extend the whole chicken further if you are feeding many mouths. Warning - you may not enjoy store bought roast chicken again after trying this one!

  • 1.2-1.5 kg whole chicken
  • vegetables of choice
  • potato or sweet potato
  • mild paprika
  • dried parsley
  • dried thyme
  • ground sage
  • onion powder
  • garlic powder
  • shortcut bacon
  • leek
  • cauliflower
  • chicken stock concentrate

Today we are celebrating the 4th anniversary of The Healthy Mix II and I decided to make the Roast Chicken Dinner with trimmings! Prep was done in my #thermomix and I cooked it in my @traegergrills Timberline 850… truly the most moist chicken ever. The stuffing is #glutenfree and #lowcarb too
  1. I love this recipe- and as an added bonus its gluten free! I find I have extra stuffing mixture and rub left over so I add it to the jug and blitz it all at the end and it adds to the flavour of that delicious gravy! Highly recommend this recipe.

  2. This recipe was amazing! I didn’t even make it all and it was still amazing! I will make the stuffing next time as I have been told it is to die for. The rub and the gravy was amazing enough (I thickened mine with cornflour)
    I didn’t do veges in the varoma though, I just roasted them separately in the oven. Can’t wait to make this again!

  4. I’m so surprised that this recipe has such good reviews. I followed the recipe to a tee, even adding boiling water when it calls for water to be added to the bowl, however half of the chicken was still raw after the suggested time in the oven so I cooked it for an extra 30 minutes, checking regularly, but still raw. So I pulled off the bits that were cooked, put them back in the oven to cook any of the raw juices that might have been on them, and just ate that. Wasted half of the chicken because we couldn’t wait any longer for it to cook. Also couldn’t eat the stuffing as it was probably in contact with raw chicken. Totally disappointed.

    1. Hi Jessica, It sounds like perhaps all the steam holes were blocked? Was it a bigger chicken? Something was definitely not right as I have cooked this sooo many times and not had that problem. Is there a chance the chicken was frozen? All the recipes have been tested by the testing team and this didn’t happen at all 🙁

  5. Everyone loved this tonight.
    The stuffing was amazing, I think the husband died and went to heaven. The sauce was my favourite part. I’ve reserved some more of the ‘pan juices’ for anther night.
    Potato was a bit on the soft side for me though.

  6. Had this last night, so tasty and moist…will try again with chicken pieces as I don’t like dealing with whole chickens. Vegetables were surperb.

  7. If I have a larger chicken (1.9kg) would I give it 5 minutes extra in the varoma and 5 minutes extra in the oven or would that overcook it?

  9. Winner, winner! Amazing moist and tasty chicken. Veges soaked up the amazing chickeny flavours too. Couldnt bare to theow out the delicious leftover liquid so have put aside the cooking liquid together with the strained leftover gravy to make chicken noodle soup tomorrow. Oh so good!

  10. This recipe is amazing. I am a bit of a traditionalist when it comes to roasts BUT this was fantastic, the chicken was incredibly moist and the stuffing Takes it to another level! Devoured by the the who,e family and will definitely be a regular in our house.
