Dietary Variations

In the cookbook we have variations to make the Cowboy Butter: Low Carb, Lower Calorie, Low Fodmap, halved and doubled. I even have it on good authority that the low carb version of the Croutons using broccoli stems is delicious on top of the Broccoli Cheddar Soup too!

Storage

Store in the fridge for up to 3 days or freeze. I always try to keep some compound butter in the freezer to add flavour to a fast dinner.

  • fresh parsley leaves
  • fresh chives
  • garlic
  • lemon
  • Wholegrain mustard
  • smoked paprika
  • chilli flakes or red bell pepper flakes
  • maple syrup
  • cayenne pepper - optional

Instructions

Serve a slice on top of grilled meat or vegetables, smother on fresh crusty bread or melt gently for a dipping sauce.
