  • 500 g Greek yoghurt

  • eggs
  • gelatine
  • lime juice
  • raw macadamia
  • shredded coconut

    To make this recipe egg free, for the lime curd this is what I’ve done. Heat 100g lime juice, 50g lemon juice and 90g sugar in a saucepan until the sugar is dissolved and the mixture starts to boil. Add 18g cornflour mixed with 50 g cold water and stir until the mixture thickens. Keep stirring and add 20g of butter (or vegan margarine if preferred), a small amount at a time. Allow to cool then use in the rest of the recipe as directed.
