When the kids and I visited Japan, we loved stopping at the convenience stores to grab their famous egg sandwiches.
Simple as they might look, there’s something so good about that combination of soft white bread and rich, creamy egg filling. So, of course, we had to create our own version for SkinnyAsia 2.
Our Tamago Sando Filling combines eggs with Japanese mayonnaise, Dijon mustard, a touch of sugar and white pepper for a creamy filling that’s generously piled between slices of bread.

What is a Tamago Sando?
Tamago Sando is a Japanese egg sandwich. Tamago means egg, while sando is short for sandwich.
You’ll find versions sold in convenience stores throughout Japan, including the famous egg sandwiches from stores such as 7-Eleven, FamilyMart and Lawson.
What makes them so good is their simplicity: soft, fluffy white bread filled generously with creamy seasoned egg.
What ingredients you will need
The complete recipe, quantities and methods are in SkinnyAsia 2, but the filling only needs a handful of ingredients:
- Eggs
- Japanese mayonnaise, such as Kewpie, or our Creamy Japanese Mayo
- Dijon mustard
- A touch of sugar
- Salt
- Ground white pepper
Then all you need is plenty of soft bread.
The Secret to a Creamy Egg Filling
Rather than simply chopping everything together, we separate the cooked egg yolks from the whites.
The yolks are mixed with the mayonnaise, mustard and seasonings first, creating a rich, creamy base.
Then the egg whites are chopped and folded through until the filling reaches your preferred texture.
You get creaminess from the yolks and mayo while still keeping plenty of texture from the egg whites.
Don’t Skip the Ice Bath
As soon as the eggs have finished cooking, transfer them straight into an ice bath for 5 minutes.
This stops the cooking process and cools the eggs down ready for peeling and turning into your Tamago Sando filling.
Make it with Hokkaido Milk Bread
You can absolutely make your Tamago Sando with fresh, soft white bread.
But if you’re going all in, pair it with the Hokkaido Milk Bread from SkinnyAsia 2.
Our Hokkaido Milk Bread uses tangzhong to create its signature soft and pillowy texture. Cut it into thick slices, lightly butter the bread and add a very generous amount of Tamago Sando Filling.
You can even remove the crusts for that classic Japanese-style presentation.
Dietary & Recipe Variations
LOW CARB
Omit the sugar, use compliant mayonnaise and serve with low-carb bread or in lettuce leaves.
SUPER SKINNY
Replace half of the mayonnaise with Greek yoghurt.
PALEO
Use compliant mayonnaise.
HALVED / DOUBLED
The recipe can be halved or doubled, with specific Thermo cooker instructions included in SkinnyAsia 2.
How to Serve Tamago Sando
Lightly butter thick slices of Hokkaido Milk Bread or fresh white bread and don’t be shy with the filling.
Pile the creamy egg mixture generously onto the bread, sandwich together and cut into halves.
