Skinnymixer’s Za’atar Spice Mix features in the Basics section of the cookbook SkinnyMediterranean

The Za’atar Spice Mix is a cookbook exclusive recipe…

I adore the bold aromatic flavours of this Lebanese inspired Za’atar Spice Mix (pronounced Zaah-tar). If you have never had Sumac before, it is quite zesty & tangy!

Please Note: We tested toasting the sesame seeds in the Thermomix and on the stovetop and found that toasting in the Thermomix didn’t bring out the required flavour and just wasn’t as good for this recipe!

There is so much flavour in this Thermomix bowl!

What can I use Za’atar Spice Mix for?

  • Serve with olive oil and bread for dipping.
  • On top of eggs
  • Sprinkled on some ripe tomatoes
  • Baked on Pita Bread to make Manooshi!
Manooshi s such a delicious meal – and so simple. All you have to do is knock up a batch of my pita bread & Za’atar marinade. Instead of pan frying the breads, you spread them with zaatar and bake them in the oven for 7-10 minutes. You can then top with left over meats, fresh vegetables and lemon juice. It’s so ridiculously delicious.

What is the Za’atar Spice Mix used for in SkinnyMediterranean?

  • Use to make the Za’atar Marinade (p.4)
  • Za’atar Bean Salad
  • Fattoush Salad
  • Sprinkle on Labneh with olive oil and fresh tomatoes

What you will need:

  • coconut sugar or brown sugar
  • dried oregano leaves
  • dried thyme
  • garlic powder
  • ground sumac – this Za’atar is sumac heavy (because I love it!). It is an important ingredient in this spice mix recipe.
  • salt
  • white sesame seeds
Ground Sumac can be purchased in Coles, Woolworths, IGA and some fruit shops with extended spice ranges.
