Bacon & Vegetable Soup Skinnymixers

Bacon & Vegetable Soup is the recipe that started it all – Inspired by Maddy from Forum Thermomix, this is the first recipe I ever released on the Skinnymixers Facebook Group and a very popular one ever since.

It is a hearty, filling and nourishing soup without the calories. Super budget friendly and you can utilise whatever vegetables that you have in the fridge.

The Bacon & Vegetable Soup recipe is a free recipe and it also features in The Healthy Mix Cookbook with updated variations for different dietary needs. Gluten free, dairy free and can easily be made vegetarian, LCHF or Keto.

You can omit the bacon for a vegetarian version or omit the carrot and pasta for the LCHF / Keto version.

Pin for Bacon & Vegetable Soup

  1. Great soup, tastes a lot like my minestrone but a lot easier to make and a lot lower in calories. Thanks for another great recipe Nik.

  2. I’m not a soup person usually.
HOWEVER this soup is absolutely amazing. Nom nom nom. I really love this.
Soooo good.. First soup ive absolutely loved.

    Yummo

  3. Another winner in this house. Easily fed 3 adults and 4 kids here with some crusty bread on the side! Will make this again soon for sure!

  4. My husband loves this so much he will take it to work and eat it cold. We always add extra tomato paste. One I like to pull out when we’ve been a bit slack on the veggie intake or someone is feeling under the weather (or I haven’t been shopping!)

  5. We love this soup, it is the only one my other half doesn’t screw his face up when i say we are having soup for dinner.
Relax mate its Skinnymixers……oh well thats alright then. Just as well for him.

  6. I used up some of my Xmas ham for this and there were lots of happy bellies! Future me will be so pleased that there was so much left over to freeze too. Didn’t add pasta but naughtied it up with crusty bread.

  7. I absolutely love this soup.
It was delicious, satisfying, even Mr. I don’t like soup inhaled it and says if we’re having soup for tea it better be this one 🙂 HAPPY DAYS

  8. My son is a huge soup lover and this soup gets a big stamp of approval from him. And me for that matter. Quick, easy and simply delicious.

  9. Super easy, fast and nutritious! I won’t be attending minestrone ever again – this was so much better!

  10. Miss 14 year old made this the other night for the family dinner and it was delicious!! So easy and yummy!! Great way to use up any vegetables that are nearing the end!!

  11. I’ve just made this and polished off one and a half bowls for lunch it was so good! It’s a great way to use any vegetables that are nearing their use by date. I included celery I’d bought and frozen, strips of bacon rind (after I’d finished blending) and broccoli and it was lovely. Instead of lemon and parsley, I did as one of the other ladies recommended and sprinkled Parmesan on top! Thanks Nik for being so generous with your recipes x

  12. A regular in our household – we make it as is if we need a low calorie fix or we add pasta for a more substantial meal. Really yummy!

  13. Oh yum! I had to blend the soup before adding the pasta (fussy kids), but the taste was magnificent. Thanks Nic 🙂

  14. I turn to this place when I want a curry, but now I’ve tried this soup, third time tonight. Didn’t think one could combine vegies like this with a tiny amount of bacon and come up with something so totally satisfying.

    Winner.
