Bacon & Vegetable Soup is the recipe that started it all – Inspired by Maddy from Forum Thermomix, this is the first recipe I ever released on the Skinnymixers Facebook Group and a very popular one ever since.

It is a hearty, filling and nourishing soup without the calories. Super budget friendly and you can utilise whatever vegetables that you have in the fridge.

The Bacon & Vegetable Soup recipe is a free recipe and it also features in The Healthy Mix Cookbook with updated variations for different dietary needs. Gluten free, dairy free and can easily be made vegetarian, LCHF or Keto.

This quick, delicious Thermomix Soup recipe features in The Healthy Mix Cookbook and was one of the original Skinnymixers recipe on the blog.

Ingredients

  • 500 g chopped vegetables - zucchini, carrot, celery, mushroom
  • 1 brown onion - quartered
  • 2 cloves of garlic - peeled
  • 60 g diced shortcut bacon
  • 20 g olive oil
  • 2 tbsp stock concentrate + 1000 g or 35.3 oz water - or 1 litre or 33.8 fl oz liquid stock
  • 140 g tomato paste
  • black pepper to taste
  • 80 g small shell pasta - optional - omit for grain free, LCHF or Keto version
  • lemon zest and chopped parsley for serving

Instructions

  • If you want your vegetables to be uniform, dice as desired - otherwise add roughly chopped vegetables to mixer bowl and chop for 5 sec/speed 4/MC on. Set aside.
  • Without washing the bowl, add onion and garlic, chop for 5 sec/speed 5/MC on.
  • Scrape bowl down, add oil and diced bacon. Cook for 5 min/100°C or 212°F/speed 1/MC off.
  • Add stock concentrate, water, reserved vegetables, tomato paste and black pepper. Cook for 13 min/100°C or 212°F/speed 1/reverse/MC on.
  • Add pasta if using and cook for 7 min/100°C or 212°F/speed 1/MC on.
  • Serve with grated lemon zest and chopped parsley.

Notes

The nutritional information for this recipe includes the pasta.
 
Bellini Users
Use blunt blade with this recipe.
At step 1 chop for longer if required.
At step 5 check pasta is done and extend cooking time if necessary.

  1. Finally made this tonight after reading the recipe at least 100 times. The perfect recipe for a cold mid week night! The will be on high rotation at our house during Winter. I love the lemon and parsley topping, and even a little sprinkle of Parmesan. Yum.

  3. Loved this, really easy with green beans, carrot, asparagus and mushrooms. Didn’t have tomato paste, so used a can of tomatoes instead and took it out of the water volume. I also sautéed the onion and garlic for a minute with the bacon. Looking forward to leftovers for lunch!

  4. This soup is simple to make, tasty and versatile based on the ingredients you have on hand. Tonight I made it using leftover lamb (rack) instead of bacon and used the following vegetables – capsicum, zucchini, beans, peas and broccoli. I usually make the soup with bacon but the lamb was a was a great alternative and the soup will remain a lunch and dinner favourite.

  5. Yum! I added all the left over veggies in my fridge before shopping day. Spring onion, half a leek, some pumpkin, spinach and carrots. Was lovely. Will be making it again. So happy there is left overs, even after I had seconds.

  9. Like others I’ve put off making this recipe as it seemed just too simple, this soup is absolutely delicious. I used celery, zucchini and cauliflower and served it with some LCHF Parmesan garlic knots… it was divine.

  10. I changed bacon to include chorizo- 1/2 and 1/2 and added Parmesan to the bowl on final mix. Only had small spirals so that went in. Yum!!!
    I think I needed to chop veg more as was too large.. But other than that it was great!

  11. Made this last night, even while sick as with a chest infection & not sauteeing the bacon with the onion, it was simple and delicious. Better still the leftovers developed flavour overnight & we had it for breakfast. My fussy toddler even stole my bowl! Thank You Nik!

  13. I’ve been meaning to make this soup for a very long time. I finally got around to it, and wow. It’s so amazing, unfortunately it won’t last as long as I would like because my 3.5yo absolutely loves it and just ate two bowls worth before dinner.

  15. Awesomely delicious soup recipe! Husband really enjoyed it too despite some misgivings when I started as he doesn’t like watery soups. Added a chilli and whizzed it up at the end (increasing speed gradually to speed 7 for two minutes). It has a great flavour and is very filling. Topped off with some crispy bacon strips cooked in the air fryer – yum!!!

  19. What a delicious meal! Enjoyed by the whole family. I added 1 large chicken breast cut into strips in the varoma during the 13+7mins cooking time and it cooked perfectly while adding some extra protein.
