Ingredients

Meatloaf:

  • small handful of parsley
  • 2 garlic cloves - peeled
  • 100 g carrot or zucchini - roughly chopped
  • 1 small onion - halved and peeled
  • 500 g beef mince - or preferred minced meat
  • 2 eggs
  • 10 g psyllium husk - or 1 cup bread crumbs
  • 1 tbsp salt
  • ΒΌ tsp cracked pepper
  • 1 tsp smoked paprika
  • 10 bacon rashers
  • 2 tbsp preferred frying oil

Smokey BBQ Sauce:

  • 30 g coconut sugar
  • 30 g butter
  • 120 g tomato sauce
  • 10 g tamari - or coconut aminos or worcestershire sauce
  • 10 g apple cider vinegar
  • 1 tsp cacao - or cocoa or instant coffee
  • 10 g lemon juice
  • 90 g water
  • 1 tsp smoked paprika

Instructions

  • Add parsley and garlic to mixer bowl, blitz for 3 sec/speed 9/MC on.
  • Add carrot and onion, chop for 3 sec/speed 6/MC on.
  • Add remaining meatloaf ingredients, except for bacon and oil, and pulse turbo 1 sec/5 times to roughly combine.
  • Remove meatloaf mixture to a silicone mat or large piece of aluminium foil and shape into a rounded meatloaf shape.
  • Wrap bacon rashers around meatloaf and secure in place with toothpicks.
  • Transfer meatloaf to large bottom steaming tray. It's okay if it bends up the sides.
  • Add 600 g or 21.2 oz water to mixer bowl and steam meatloaf for 45 min/steaming temp/speed 2/MC off. In the last 20 mins of steaming time, feel free to add vegetables around meatloaf to cook and serve.
  • With 5 mins remaining, heat preferred oil in a large frying pan to medium heat.
  • Transfer meatloaf to frying pan and brown on all sides.
  • While the meatloaf is browning, prepare smokey BBQ sauce with a clean bowl:
  • Add all sauce ingredients to mixer bowl, cook 5 min/steaming temperature/speed 2/MC off.
  • Remove toothpicks and serve meatloaf with steamed vegetables or salad and smokey BBQ sauce drizzled over the top.

Notes

I used smoked streaky bacon.
You can prepare the sauce standalone to use with other dishes.
I used Thermobextas *amazing* tomato sauce recipe for my sauce, in which I substitute the raw honey with coconut sugar πŸ™‚

  1. The sauce is a definite keeper!! Was dubious about the steaming of the meatloaf but it turned out very moist even after a quick frypan blast to brown it up. The only thing I would change next time is more salt. 4yr old ate it so it’s a winner πŸ™‚

  3. This was delicious Nik and dare I say it but liked it better than the EDC meatloaf. Not only was it easy but the browning of the bacon and the sauce just made the dish complete. πŸ™‚

    Fussy toddler who doesn’t like much meat. Hubby that loves hearty meaty meals and then there is me who is watching portion sizes etc. I could accommodate everyone. First meal in weeks I didn’t have to ‘encourage’ 2.5yr old to eat. She could also cut it herself which is an accomplishment right there.

  5. So yummy, I subtituted parsley for dried oregano and omitted the butter (because I forgot) and the coffee from the sauce. I didn’t have toothpicks so it felt apart a bit in the pan but the whole family loves this one. So easy to make too!

  6. Great recipe – will be definitely making this again. I substituted brown sugar for the coconut sugar and was divine. Very full bellies and empty plates in my house!

  7. Made this tonight for the second time – everyone loved it again. My previous meat loaves were too fatty and not that tasty, I hadn’t cooked them for years because I sucked at them. Now this is definately on the menu plan!

  9. Made this tonight with carrot and zucchini (50g of each) and used coriander instead of parlsey – just a little. Didn’t have any tomato sauce to use as a base for the sauce so used some preserved roast tomato and onion that I had. Came out quite runny and not very dark but tasted good! Meatloaf was fantastic πŸ™‚

  10. Best Meatloaf Ever! I added both a carrot and a zucchini and an extra 100g of mince because I had 5 adults and 2 kids to feed. It made it a little hard to handle but everyone loved it, especially the sauce. This is now our go to meatloaf recipe πŸ™‚

  13. Thanks Nik, another keeper. When I added this to our meal planner my husband said…’just as a note, I don’t really like meatloaf’. He has now changed that statement to say, except this one. The BBQ sauce was also a winner xx

  14. AMAZING! Easy to make. The Sauce is without a doubt the best I have ever tasted and will be making it on its own in the future for sure. Hubby took leftovers to work and didn’t want to eat it as he wanted everyone else to taste it (to brag!).

  15. Made this last night for a family of four. Was fantastic. Easy to make and go the thumbs up for everyone. Didn’t make the BBQ sauce, but maybe next time after I have made the tomato sauce first! πŸ™‚

  16. Yum, yum, yum, yum, yum. Subbed prosciutto for the bacon and omitted the psyllium husks altogether and still turned out fabulously…Satisfied 2 adults and 2 kids, with everyone asking for seconds…
