Skinnymixers Tips

We have seen a few tips in the Skinnymixers Facebook Group to achieve the best ‘ooze’ factor. Follow these tips to get maximum ooze.

  1. Wet your hands when forming the Kievs and make sure they are sealed really well.
  2. Freeze your garlic butter or other alternative filling first.
  3. Follow the recipe and pan-fry first to make sure you don’t over cook in the oven trying to achieve a crispy coating.
  4. Some Skinnies prefer to freeze first and cook from frozen.

Ingredients

Crumb ingredients:

  • 100 g raw almonds - or alternative nut or sunflower seeds for nut free
  • 1 tsp dried oregano
  • 1 tsp onion flakes or powder
  • 1/2 tsp sweet paprika
  • pinch of black pepper
  • 1/4 tsp salt

Herbed garlic butter ingredients:

  • 100 g cold salted butter - cubed
  • 2-3 cloves of garlic
  • small handful of fresh parsley
  • small handful of fresh basil
  • pinch of fresh thyme

Chicken ingredients:

  • 500 g chicken breast - cubed
  • 1 whole egg
  • 1 tsp salt
  • 100 g Parmesan cheese - cubed
  • oil of choice for frying

Instructions

  • Put raw almonds into mixer bowl, mill for 5 sec/speed 9/MC on. Set aside and stir through spices, salt, and pepper.
  • Without washing mixer bowl, put Parmesan cheese into mixer bowl, mill for 10 sec/speed 9/MC on. Set aside.
  • Without washing mixer bowl, put herbed butter ingredients into mixer bowl, blend for 40 sec/speed 5/MC on. Set aside.
  • Without washing mixer bowl, put chicken ingredients, including reserved Parmesan cheese and 20 g or 0.7 oz of the reserved crumb mixture into mixer bowl. Blend for 40 sec/speed 9/MC on.

Assembly:

  • Preheat a frying pan to medium high heat, and oven to 180°C or 350°F fan forced.
  • Take chicken mixture and divide it up into 4 or 6 round balls. Wet hands help with this.
  • Take one of the balls and flatten it out to the size of your palm. Place 1/4 or 1/6 of the herbed garlic butter in the centre. Fold chicken mixture around the butter and form an oval shape - like the shape of a chicken breast. Ensure there are no thin spots so your buttery goodness doesnt ooze out while cooking.
  • Coat the chicken liberally in the reserved crumb mixture and set aside. Repeat the process for the remaining chicken.
  • When all chicken is coated, recrumb a second time.
  • Put oil of choice into frying pan and lightly fry the kievs for a few minutes each side, or until golden brown.
  • Transfer fried kievs to a preheated 180°C or 350°F airfryer for 7 mins, or oven proof roasting tray and bake in the oven for 10 minutes or until done (smaller ones may need a little less time!)
  • Let the kievs rest for 5 mins before serving.

Notes

If you want to ensure your butter doesnt leak out of your kievs, freeze the butter in a cylinder (wrapped in gladwrap) and use it frozen.
If you arent keen on frying, you can bake in the oven for 20 minutes, turning once half way through.
Yes - this can be frozen for a quick dinner - freeze raw! (Bake 180°C or 350°F 25-35 mins from frozen - check after 20 mins)
Experiment with your herbed garlic flavours - for example chilli and ginger for an asian inspired dish or cheese added for a fat boost.
Breadcrumbs can be used as an alternative to the almond meal for those not following LCHF - do an eggwash before crumbing for this.
You can see a list of alternative stuffing ideas here.

LCHF Chicken Kiev Thermomix recipe

  1. Made this for the family last night, deliciousness in a parcel. We all loved them. Will definetly be adding this to the regular list. Thank You.

  2. Another winner Nik..
Used thighs as I prefer them, added large handfuls of herbs and oven baked them..
I made 6, hubby ate 2, so there’s 1 for his dinner tomorrow night while I’m away and 2 into the freezer uncooked to see how that works.
I flattened out all 6 batches of the mix on baking paper, then added the butter to them then shaped and rolled them in crumb mixture..
I also refrigerated them for about 4 hours before cooking.
Will definitely be a regular, especially if they freeze well and cook from raw.

  3. Absolutely loved it. Easy to make. Had a bit too much almond crumb mix leftover unfortunately which I didn’t keep as contaminated with uncooked chicken. Husband lived it. Definitely will be a regular dish. Keep them coming Nikalene

    1. If you have leftover crumb mix from this or any other recipe you can freeze it in a snap lock bag. Keeps it perfectly safe!

  4. Thankyou for another fantastic dish Nik. Hubby and I loved them. Will definitely be on high rotation.

  5. Nik, would it work if I leave out the parmesan cheese? My kids are allergic to dairy. Any substitute you can recommend? 🙂

    1. I think so! It might be good to add just a little more salt to the mix but make it once and see… xx

      1. I make mine with Quirky Jo’s macadamia cheese as a substitute for the parmesan cheese, to make it DF (and I use Nuttelex in place of butter). Yummy!

  6. Another fabulous recipe from Queen Nik! Not only exceptionally tasty but so so easy.
    Absolute winner.

  7. I made these tonight for the first time for hubby and I and wow! Hands down best kiev we have ever had. Wouldnt even know the crumb crust was not using breadcrumbs. Will definately be making these again.

  8. Made these for dinner last night, didn’t have fresh parsley so just used dried. Hubby doesn’t like nuts but loved the coating, very filling & delicious meal. Another great recipe. Thanks Nik 🙂 ps don’t over fill with the butter or they will spill out!!

  9. I made these on Friday night as a special treat for the hubby. Even with my appalling frying skills they turned out awesome. Will definitely be cooked again… and again…. and again. I made them into 6 but will probably split into 4 next time as we ended up eating 2 each and then snacking on the left overs.

  10. I did these exactly as per the recipe and they were absolutely delicious! Definitely need more than 6 though – my partner ate 3 in one sitting!!! :O

  11. Made these last night for dinner.. As usual with your recipes Nik, AMAZEBALLS!!! So quick and easy, will definitely be in regular rotation in our house! Our bellies thank you! Xx

  12. Made these on the weekend. Loved by all. I coated in dukkah instead of the crumbs as we had no almonds, and baked in the oven. Kids loved cutting them open to reveal the oozing butter. My 8 year old son has requested we make a big batch together so there are always ones in the freezer. He also wants to take them cold for school lunch. Husband didn’t realise they were made from minced up breast until I told him. Thought it was the real deal! Another winner. Thanks.

  13. Omg, just made and ate this yummy and easy dinner. Very fussy husband gave it a HUGE thumbs up. Thanks so much Nik. This will be a regular in our household. It will be something I can also make in advance and freeze.
Shops selling chicken Kiev for $3.99 each, I made 6 for about $5.00

  14. Very yummy and super filling. Fussy kids n hubby loved it!!! Even had 2nds!!! Will make again for sure!!!
