  1. These meatballs are great with chicken mince as well as turkey mince.
  2. They make fantastic Turkey Burgers
  3. You can make the Cranberry Sauce first and then make these without washing the bowl!

Dietary Needs

  • This recipe is gluten-free if you use almond meal or gluten-free bread.
  • You can leave the egg out if you need them to be egg free.
  • To make them low carb, use almond meal and serve them with some Alabama White Sauce
  • For Low Fodmap – use gluten-free bread, replace onion with chopped spring onion and replace onion powder with dried chives.

Freezer Friendly

Feel free to freeze this recipe before cooking or freeze once cooked. The cooked frozen meatballs are great to grab for school lunchboxes or last minute bring-a-plate events.

Ingredients

  • 80 g stale bread - large chunks or almond meal
  • 1 large handful flat leaf parsley leaves
  • 1 small brown onion - peeled, quartered (approx 100 g)
  • 500 g turkey mince
  • 1 egg - optional
  • 1 tsp dried sage leaves
  • 1 tsp dried rosemary leaves
  • 1 tsp salt
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp onion powder
  • 1/4 tsp nutmeg powder
  • 1/4 tsp ground white pepper

Instructions

  • Add bread, parsley and onion to mixer bowl. Chop for 2 sec/speed 8/MC on, repeat if required. Scrape mixer bowl down. Ensure there aren’t any large chunks left.
  • Add remaining ingredients. Mix for 10 sec/speed 3 - using your spatula through the lid to help combine.
  • Using wet hands, roll into 25-30 bite-sized meatballs. You can make smaller ones which will be approx. 40 and will cook faster.

To Cook

  • FRYPAN: Preheat a large frypan with 1 Tbsp oil to medium-low heat (turn down to low heat if they start to burn!). Pan fry meatballs, browning all over for approx. 5 min each side or until 74°C or 165°F internal temperature is reached.
  • AIR FRYER: Cook in 2 batches in the air fryer. Cook at 200℃ for 10-12 min or or until 74°C or 165°F internal temperature is reached.
