What ingredients you will need

  • 500g beef mince
  • American mustard 
  • butter or olive oil
  • ketchup or tomato sauce
  • cream of choice
  • Worcestershire sauce
  • pumpkin
  • zucchini
  • macaroni

  • pickles – You can use the Quick Pickled Vegetables or Dill Pickles

  • Protein swap – Feel free to change the mince to your choice of meat. Pulled chicken or strips of steak would be delicious stirred through.
  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock. 
  • Don’t like pickles – Just leave them off when serving.
  • Boost the protein – stir through some blended cottage cheese with the grated cheese. 
  • Dairy-free – Use dairy-free cheeses or add 3 Tbsp nutritional yeast, ½ tsp salt and 100 g or 3.5 oz raw cashews in Step 3.
  • Gluten-free – Cook pasta to specified time on the packet.
  • Low carb – Use compliant sauces. Replace pasta with 400 g or 14.1 oz cauliflower florets. Halve water.
  • Lower calorie – Use low-fat cream and cheese. Use Low Carb variation and lean mince. Use vegetable stock concentrate.
  • Paleo – Omit cheeses and halve water. Use compliant sauces. Add nutritional yeast, salt and  raw cashews in Step 3. Replace pasta with cauliflower florets and cook until tender.
  • Go veggie – Replace mince with tinned brown lentils, drained and rinsed. You can also use plant mince or tempeh mince.
  • Low Fodmap – Omit garlic powder. Replace onion powder with dried chives. Use garlic infused olive oil, compliant stock concentrate, compliant sauces, gluten-free variation and lactose-free cheeses/dairy.

How to Cook

  1. Grate cheeses.
  2. Blitz vegetables.
  3. Cook vegetables in sauce.
  4. Brown mince with spices.
  5. Blend sauce with cream.
  6. Cook pasta.
  7. Combine all together.

How to Serve

  • Toppings – Serve with pickles and onions, then drizzle with ketchup and mustard for the ultimate cheeseburger flavour.

Storage & Meal Prep

  • Fridge – Store in the fridge for up to 3 days.
  • Freezer – This recipe freezes well.
  • Thawing from frozen: Let it sit in fridge overnight, then warm gently (or enjoy cold).
  • Make ahead – freeze cooked for up to three months.

I’ve been on a mission to try to increase protein in our dinners and what could be better than extra protein in a hidden vegetable mac and cheese! My favourite thing about this recipe is that it tastes like you are eating a cheeseburger and my lovely teenage kids actually love it! Don’t skip the pickles and shallots on top.
