Skinnymixer’s Quick Pickled Vegetables from the Thermomix Cookbook SkinnyBarbecue are the perfect accompaniment to your BBQ feast.

I think this Quick Pickled Vegetable Thermomix recipe is my most cooked recipe from the new cookbook!

The flavour combinations are endless but here are some of my favourites:

  • Pineapple, jalapeƱo and pink peppercorns – this combo is amazing on Mojo Pulled Pork Street Tacos (check it out in SkinnyBarbecue!)
  • Cucumbers, yellow mustard seeds, black peppercorns, cloves, bay leaf and dill – you need these for your Smash Burgers Royale!
  • Cucumber, carrot, daikon – to have with your Bulgogi Beef Cheeks or Pork Belly Burnt Ends Banh Mi.
I’m in love with Pickled Pineapple Salsa!

These Quick Pickled Vegetables are going to be something you want to have in the fridge at all times. Honestly, they make the easiest side dish to serve with your barbecue.

  • vegetable or fruit of choice - thinly sliced
  • vinegar - white, apple cider, rice wine or red wine
  • sugar of choice
  • sea salt flakes or kosher salt - (not table salt)
