Rainbow Beef Stir Fry 🥡 was THE MOST requested recipe for our Dinners 4 cookbook and this recipe doesn’t disappoint! It’s so incredibly easy to cook, simply marinate the beef while you prepare the vegetables. Then it’s a super quick fast cook and on the table within 10 min 🤩 I prefer to cook this one hot and fast in the wok but we also have an equally delicious Thermomix version.

  • brown sugar or coconut sugar

  • cornflour
  • garlic powder
  • ground white pepper

  • olive oil
  • oyster sauce – if you have dietary restrictions we have a great recipe for Vegetarian Oyster Sauce that can be used.
  • red capsicum

  • Protein swap – Feel free to swap the beef for lamb, pork or chicken.
  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock. 
  • Don’t like capsicum? Feel free to use your stir fry vegetables of choice like snow peas, sweet corn, zucchini, celery, cabbage.
  • Gluten-free – use gluten-free sauces and cornflour. AYAM is great for gluten-free Asian style sauces.
  • Low carb – Use compliant sweeteners. Use the Vegetarian Oyster Sauce recipe from the website. Replace cornflour with xanthan gum. Replace carrot with shiitake mushrooms or green beans, cut in bite-sized pieces.
  • Lower calorie – Replace beef with lean pork or chicken. If using chicken breast, use conventional method.
  • Paleo – Use the Vegetarian Oyster Sauce recipe from the website. Replace rice wine vinegar with apple cider vinegar. Replace cornflour with tapioca flour.
  • Go veggie – Replace beef with shiitake mushrooms and tofu. Use vegetarian oyster sauce.
  • Low Fodmap – Replace garlic powder with garlic infused olive oil. Replace red onion with spring onion (green part only). Use compliant sauces.

How to Cook

I like to cook this recipe hot and fast in the wok. It’s an incredibly fast and easy recipe.

First we combine the meat with the marinade ingredients. Then the sauce ingredients in a small bowl.

Heat the wok and brown beef in batches. 

Stir fry vegetables, add beef and sauce.

Cook until the sauce is glossy and coats stir fry well.

How to Serve

  • What to serve with –  rice, noodles or cauliflower rice. 

Storage & Meal Prep

  • Fridge – Store in the fridge in an air-tight container for up to 3 days.
  • Freezer – This recipe can be frozen, although the crispness of the stir fry is lost.
  • Reheat – Reheat gently in the microwave.
  • Thawing from frozen: Let it sit in fridge overnight, then warm gently (or enjoy cold).
  • Make ahead – freeze cooked for up to three months.
  • Lunchbox win – perfect for school in a thermos or work lunches.

FAQs

Which is the better cooking method?
Nik prefers to cook this recipe hot and fast in the Wok. However, the Thermomix version is nice and saucy with the added bonus of hands-off cooking. They are both delicious.

Do I need to tenderise the beef?
You can if you like but we found it didn’t need it. The beef sliced across the grain, thinly – will produce beautifully tender stir fry meat.
