This Vietnamese Beef Salad from The Healthy Mix IV is a fresh, flavourful and nutrient packed Thermomix salad that has a delicately balanced sweet, tangy and salty dressing.
I love this as a midweek dinner, with leftovers for lunch the next day. It is also fantastic to meal prep for a few meals at a time, as the flavour develops in the fridge.
To save time with cutting my carrots to be thinly julienned, I used my trusty Julienne Peeler from Everten. If you don’t have one yet, I love mine to make some quick zoodles too.
