Skinnymixer’s Chicken Congee Thermomix recipe is a basic savoury rice porridge, however the flavour of the skinnymixer’s Chicken Stock Concentrate really shines in this dish making it pure comfort in a bowl.

We highly recommend making a batch of skinnymixers’ Chicken Stock Concentrate for this recipe.

During the development phase for our cookbook SkinnyAsia (out September 22nd, 2023), whenever someone on the Skinnymixers Team was unwell it was a batch of Congee to the rescue!

This is a meal you can have for breakfast, lunch or dinner and perfect comfort food when you are feeling sick. It is especially great if you have an upset tummy as it helps replace your fluids and doesn’t upset your tummy.

I know for my family and so many Skinnymixers, it has been a difficult Winter. So I thought it was the perfect time to share this very basic but tasty Congee with you.

The amazing Betty Wong has taken a stunning photo of the Congee showing how she served it to her family – topped with chives, ginger, dough sticks, pork floss, preserved/pickled veg – all of which you can get at the asian grocers.

Instructions

  • Rinse rice well and add into mixer bowl with all ingredients.
  • Cook for 30 min/98℃/speed 2/MC off. Allow to rest for 5 min before serving.
  • Serve with your choice of garnishes. Start with some soy sauce, fresh sliced spring onion, ginger and a couple drops of sesame oil.
