I love a good Chicken Parmie, but every time I order one, I end up terribly sick as it wasn’t gluten free 🙁 So I gave up my love for oversized parmies many years ago.

What You’ll Need

How to Make It

  1. Prepare the Crumb – Blitz your nut/seed mix in the Thermomix until you’ve got a crumb with texture (not dust!).

  2. Crumb the Chicken – Dip in egg, coat in the crumb, and fry until golden and crunchy.

  3. Top It – Add your homemade napoletana sauce and a generous handful of cheese.

  4. Bake Until Bubbly – Finish in the oven until the cheese is golden, gooey and irresistible.

Serve it up pub-style with salad and fries—or go low carb with zoodles or steamed greens.

Storing & Reheating

Grain Free Chicken Parmie

Ingredients

Crumb Ingredients

  • 50 g sesame seeds
  • 50 g sunflower seeds - or raw almonds or bread crumbs
  • 2 tsp italian herb mix - from the supermarket
  • 1 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Parmie Sauce Ingredients

  • 150 g tomato paste
  • 50 g semi dried tomato
  • 50 g roasted capsicum
  • 15 g water
  • 5 g olive oil
  • 1/4 tsp Italian Spice Mix
  • 1/4 tsp salt
  • pinch of pepper
  • pinch of dried chilli flakes - this is optional, but HIGHLY recommended - it isnt spicy!

Chicken Parmie Ingredients

  • 500 g raw chicken breast - cubed
  • 1 egg
  • 1 tsp salt
  • 20 g of reserved crumb mixture

To serve

  • Oil to fry
  • Cheese of choice - I used baby bocconcini

Instructions

  • Add crumb ingredients to a dry mixer bowl, chop for 3-5 sec/speed 5/MC on. You want to have a crumb texture, not powder. Set aside on a large plate.
  • Without washing the bowl, add your paste ingredients and chop for 5 sec/speed 5/MC on. Set aside in a bowl, ensuring to scrape out as much of the sauce as possible.
  • Without washing the bowl, add chicken parmie ingredients and process for 40 sec/speed 9/MC on.
  • Divide the chicken mixture into 4 or 6, with damp hands and form into 2 cm steaks. I found putting a portion of the chicken mixture onto the plate of crumbs, and pressing it out onto the crumbs the easiest way.

To Cook

  • Pre heat a frying pan to medium high heat with preferred oil. Also pre heat your grill to medium high.
  • Fry your schnitzels for around 3 minutes on one side so its golden brown, then flip and fry for around 2 minutes. You dont want to overcook them as they will continue cooking under the grill.
  • Top each schnitzel with your reserved parmie sauce, then cheese and grill until golden brown.

Use your sharp blade for this recipe.
At step 1 start with processing for 5 seconds and do it for longer if necessary.

    Loved this recipe it was so light and left me wanting more! the only downer is i cant find anywhere if the recipe allows the left overs to be frozen.. not that it matters coz ill let it for lunch tomorrow :-). thank you for a very yummy light parmie that was full of flavour is easy to cook!

  3. I made this tonight, but sadly wasn’t a fan of the parmie sauce! I followed the directions exactly, but all I could taste was tomato paste, it just had no flavour and was so thick. I would cook this again but use passatta sauce instead of so much tomato paste.

  7. This is sooo good! I got 4 parmies out of the batch. I didnt blitz the crumb, just mixed together. I love garlic so added some garlic to the sauce and will add it to the meat next time. The sauce was amazing, i was eating it out of the bowl, had to try and save some for the meal!

  17. This is a brilliant dish. I did a couple without the topping for the youngest son to take for lunch. I didn’t have roasted capsicum so just popped in fresh capsicum. Also made a batch of home made tomato paste as I am using so much of it! Nik’s recipes just work!

  20. Made these tonight. I added 600gm chicken fillet , as I was serving 4 adults and 2 child size meals. Also changed the Parmie sauce to be Fodmap friendly. Everyone loved it and elderly guest with poor chewing ability loved getting onto a parmie again…..10plus. Will be a family favourite. Thankyou so much

  27. Just made these for dinner – as everyone else has said “AMAZING!!!”. My only minor stuff-up was not knowing how long to grill them for at the end or what temp to set the grill to- and so ended up slightly burning them. But lucky for me I don’t mind a slightly burnt flavour 🙂 🙂 Served mine with a light salad just like you might get at a pub & I was in foodie heaven! Why would you pay for a parmie when these can be made so easily and TASTE BETTER?!!!! Thanks Nik!!

  28. This was a winner with the whole family (including my 3 year old which I made ‘Nuggets’ for using smaller amounts of the chicken mixture) I served it with some of the silky sweet potato mash and some corn. A quick and easy meal – definitely will be on high rotation around here!

  33. Errrr….yes. Just had this for dinner, I ate double my normal portion size. So did my 4yo son. Too bad for my gorgeous hubby who’s not home yet! Few notes: I had to chop my crumb ingredients for about 12 seconds before the sunflower seeds broke down. I followed the cooking times pretty much exactly and it worked a treat.   34. So yummy. I changed the sauce a little to suit our tastes – extra capsicum as we don’t like sun-dried tomatoes and I didn’t have any tomato paste so I used leftover pizza sauce from the mexican shredded chicken pizza recipe and it was delish. Thanks for the recipe 🙂

  35. Made these Sunday night for our friends instead of going to the Pub for Parmies!! Well what can I say amazing!! After previously adapting the Kiev recipes for Parmies, this takes it to the next level!!! Used 4 breasts and doubled everything else adding extra tomatoes to the sauce – ended up with 12 Parmies, enough for hubby and 17 yr olds lunch the next day! All I can say is winner winner and hi fives all round to Nik!! Everyone loved it from our friends 6 yr old to our older teenage kids!! My best friends husband said brilliant, just saved us all $250 at the pub for dinner – she already has a thermomix too so next time we are using both and doing up a huge batch for the freezer!! Just think if you didn’t have a thermomix and regularly go out for Parmies you could pay for your thermie very quickly!! Well that’s what my 22yr old sons girlfriend told him 😆😆😆

  37. Delish!!! I don’t actually like tomatoes or capsicum but decided to try it anyway due to the rave reviews. Once again Nik you didn’t disappoint. Only 2 of us at home so had the leftover snitzel for breakfast then again for lunch. About to use the leftover parmie sauce in a bolognese 😄

  41. This was awesome,like all of Nik’s recipes. No washing the bowl between steps. I made it with all sundried tomato,as I had no capsicum. Tasted fantastic. My 5 year old grandson ate a whole one to himself,unheard of. He usually eats all his vegetable and picks at the meat. My 2 teenagers ate it all. I made 700g and got 7 serves.   42. I don’t think I have ever eaten a chicken parmie before. Somehow I have always related them to something you might find in the hotbox of a roadside truck stop. Not very appealing. I didn’t even have all of the ingredients when I decided very late in the day to give these a go for dinner. So easy, so tasty and no complaints across the board.   43. I made this for myself but ended up taking it over to a grateful mum and a fussy “I don’t believe in healthy food”dad. When he was done he asked me if I had made that from scratch or bought it.   50. Soooooo yummy and quiet easy to make. I made them almonds and sesame seeds. I added the pinch of chilli and it gave it a slight zing of heat which everyone loved.
    2 chicken breasts made enough for my family of seven.

  52. wow! I cannot believe I can make a chicken parmie in my Thermomix. Skinnymixers makes anything possible. I made mine with raw almonds and it was absolutely delish. Hubby who loves a pub chicken parmie took 1 mouthful, gave me a high five and declared them the best parmie he has ever had. I served mine with salad. Such a fantastic quick, easy and really tasty Thermomix mid week meal.

I used a mixture of sesame seeds and homemade wholemeal bread crumbs (I always keep my crusts in the freezer), 700g of chicken breasts because that’s what 2 breasts weighed, and I only had a few sundried tomatoes left in the bottom of the tub, but I poured in the oil for extra flavour and doubled the capsicum quantity (because 1 roasted capsicum weighed 100g). I also doubled the quantity of all the other sauce ingredients. This is what I love about this recipe though. You can tweak it a bit and it still turns out fantastic! No rinsing the bowl in between, the chicken turns into the most fantastic texture following the recipe exactly. I made in my Bellini using the sharp blade from start to finish, then put baking paper on my scales, scooped the chicken onto it, and grabbed 100g handfuls for the crumb mix (which I increased slightly due to the increased amount of chicken). Ended up with 7 perfect patties that looked awesome and tasted divine! Was easy to make early and come back to later. Capsicum and sundried tomato sauce combo, pure genius Nik! Thanks for another awesome family friendly meal!~

  55. “Dinner of Champions” said very happy hubby! I didn’t have semi-dried tomatoes so just increased the amount of capsicum to compensate. Everyone else in family loved it too. Definitely a keeper in the recipe folder!

  56. This was amazing! I used the sesame seed and almond crumb (and was a little short on sesame seeds so added extra almonds). My husband voted it “best parmie ever”, kids had it as just a schnitzel without the topping. So easy and tasty – will be staying on the menu

  57. This was delicious and so easy to make. I used the sunflower seed and sesame seed crumb, and it was yummy. Next time will try the almond and sesame crumb just to compare. Had no capsicum so used extra semi dried tomato with no problem. This is definitely going to be a regular in our house!
