After the success of Mez’s Pumpkin Loaf, Mez is back with another treat—this time a Sticky Date Tea Loaf that’s perfect for afternoon tea or a cosy cuppa.
We are currently all hands on deck for the SkinnyMediterranean launch October 10th but when we received this Recipe Request – Mez quickly jumped in the kitchen late one night to develop this delicious Sticky Date Tea Loaf!
Request: Hi lovely team,pumpkin loaf is awesome and would love to be able to make a date loaf too. It would be great to be able to use either dried pitted dates (cheaper option) or medjool dates, so I can be flexible. Most of the thermomix recipes blend the dates too much so you don’t get the chunks of date throughout, which I prefer and when I chat to others, they prefer too. ATM, I generally go old school when making a date loaf for this reason. Would love a good thermie recipe! Thanks for all you do. Warm regards, Rebecca

This loaf has all the nostalgic comfort of sticky date pudding, but in a lighter tea-time version that slices beautifully. It’s naturally sweetened with dates, keeps moist for days, and fills the kitchen with the most delicious smell while baking.
You can enjoy it on its own with a spread of butter, or warm it slightly and serve with cream for a fuss-free dessert.
We love how versatile this loaf is—it’s one of those bakes you’ll make once and keep coming back to.

You can easily adapt this Sticky Date Tea Loaf to a number of different dietary needs.
- Gluten-free – our testers have had success with Woolworths & White Wing GF self raising flour. For our NZ skinnies – do not use Pams brand flour.
- Dairy-free

It’s light, fluffy and soft. I waited half an hour to cool before cutting, it was just warm.
Sliced easily with a bread knife. I used 3 bags of lipton black tea to make the tea with. Perfectly cooked in 40 min. Next time with chop the dates a bit chunkier. I made it to take to Mums place tomorrow for Morning tea but lol there’s only less then half leftMaking another one in the morning
Guest Recipe: Mez's Sticky Date Tea Loaf
Equipment
- loaf tin approx. 22 x 12 cm
- baking paper
Ingredients
- 250 g hot tea - strong black tea works best
- 150 g dried dates - pitted
- 120 g butter - cubed (dairy-free if required)
- 100 g sugar of choice - caster or brown sugar (Brown sugar will give you a darker coloured loaf.)
- 220 g self-raising flour - gluten-free if required
- ½ tsp bi-carb soda
- 10 g vanilla paste
- 1 pinch salt
Instructions
- Preheat fan-forced oven to 180°C. Grease and line a loaf tin (approx. 22 x 12 cm).
- Add dates to mixer bowl. Chop for 3 sec/speed 7/MC on. Scrape down.
- Add hot tea and butter. Mix for 10 sec/speed 3/MC on. Scrape down and leave mixture in bowl to cool for 15 min.
- Add sugar, flour, bi-carb soda, vanilla paste and salt. Mix for 20 sec/speed 4/MC on. Scrape down and repeat if needed until just combined.
- Pour mixture into prepared loaf tin. Bake 40 min, or until a skewer inserted in the centre comes out clean.
- Cool slightly in tin before transferring to a wire rack.
- Allow to cool completely before slicing, as it is very soft.
- Tip: For chunkier dates throughout the loaf blend on Speed 6 , or chop your dates by hand.
