- No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock.
- Low carb – Replace potatoes with cauliflower florets, added in the last 20 min of cooking.

- Low Fodmap – Omit garlic. Use garlic infused olive oil. Replace onion with leek (green part only). Use compliant stock concentrate.
How to Cook
This dish is traditionally cooked low and slow. The fragrant tomato sauce is flavoured with the garlic, onion, herbs and stock concentrate.
Cook until the potatoes are tender and the beans are soft – the beans are meant to be well cooked and not crunchy.
How to Serve
- Serve with some crusty bread and crumbled feta over the top.
- You can eat as a simple main meal or serve as a side-dish to roast lamb, BBQ meat or protein of choice.
Storage & Meal Prep
- Fridge – Keep in the fridge for up to 4 days or freeze.
- Make ahead – freeze cooked for up to three months.

FAQs
Can I add meat to this dish?
Personally I think it is best to serve with some grilled lamb chops or protein cooked separately.
Do you have a preferred Tomato Passata or Tomato Paste brand?
I find some of the cheaper tomato passatas and tomato pastes quite acidic and lacking flavour. I love to use the Mutti or Leggo’s brands here in Australia, This is a very simple dish, with simple flavours – sometimes cheaper isn’t always better.
