Yemista Stuffed Capsicums

This Yemista Thermomix recipe for Stuffed Capsicums is exclusive to the cookbook A Little Taste of Greece. My mum and dad were capsicum farmers, so stuffed capsicum was something that we ate as a regular staple growing up—we ate it so often that I actually hated it but now as an adult I LOVE it!
