Greek skinnies will know this as Giouvetsi, but growing up it was my dad’s lamb chop dinner.

We didn’t have a lot of money, and with five kids my Dad knew how to feed us on a tight budget. Forequarter chops were very cheap and combined with his tomato passata, one meal could feed us for days.

Feel free to use any stewing lamb such as shanks or shoulder.

Ingredients

  • 1 med brown onion
  • 3 cloves garlic
  • 400 g passata
  • 400 g tin diced tomatoes
  • 30 g tomato paste
  • 20 g Stock Concentrate
  • 300 g water
  • 1 Tbsp coconut sugar or brown sugar
  • 1 Tbsp dried oregano leaves
  • 2 tsp sea salt flakes or kosher salt
  • 1/2 tsp pepper
  • 1000 g lamb forequarter chops - or any stewing lamb/beef cuts
  • 200 g risoni or orzo - gluten-free if required
  • 300 g water

To Serve

  • flat leaf parsley leaves
  • feta - optional

Instructions

  • Preheat a large, deep sauté pan with a lid or cast iron casserole dish on stovetop to high heat.
  • Add onion and garlic to mixer bowl. Chop for 3 sec/speed 6/MC on. Scrape mixer bowl down.
  • Add passata, tomatoes, tomato paste, stock concentrate, water, sugar, oregano, salt and pepper into mixer bowl. Cook for 15 min/steaming temp/ speed 1/simmering basket on top of lid.
  • While sauce is cooking, add oil to the sauté pan and brown meat.
  • Pour sauce over meat, cook covered on stovetop on low heat stirring occasionally for 1–2 hr or until tender. Alternatively, cook in a BBQ, smoker or fan-forced oven at 160°C or 320°F. Top up with extra water if required.
  • Once lamb is tender, set aside in a thermoserver. Add water and risoni to sauce, stir through. Cover and cook for a further 20 min or until the risoni is al dente, stir occasionally.
  • Add lamb back in and allow to rest for 10 min before serving.
  • Serve sprinkled with feta and parsley with a side salad or green beans.

Reminds me of a recipe my sister and I used to make when we first moved out of home over 30 years ago!!! A very comforting and warming recipe.     Okay so here in Australia, winter has come early. You know what? That’s okay because it means winter warming recipes like these.

    This one is of those comfort foods that is packed with flavour. I made mine with beef. Yum.

    My Dad’s Lamb Risoni Bake is one of those old school, belly warming meals we all need in our life. It just feels like a big ol’ warm hug from my childhood. I grew up with a version of this using rice in lieu of risoni. This meal transported me right back to my grandparents house in the 70’s and 80’s. Now I can give my own family the same delicious memories. Thanks for trip down memory lane Nik (and Dad!) 😊

    My husband said he was going to have to shake Nik’s Dads hand after having this for dinner. This recipe is the perfect balance of fresh & comforting, the flavour is perfect, the meat melts in your mouth!

    This dish is so delicious!
    I didn’t make it straight away as I’m not a fan of lamb, so I made it with Osso Bucco which still keeps this dish cost effective. There is not one dish I don’t like in the new SM Dinners book, it’s so worth it!

    I have made this recipe so many times! It’s soo comforting and delicious! I use the chicken drumstick variation as my family aren’t keen on lamb.
