Toasted Sesame Seeds
The sesame seeds are the star here, so make sure they’re toasted before making the dressing.
If you’ve bought raw sesame seeds, lightly toast them in a dry frying pan until fragrant, keeping a close eye on them as they can burn quickly.
Allow them to cool completely before blending.
Don’t Blend the Sesame Too Fine
We’re not trying to turn the sesame seeds into a completely smooth paste.
Briefly milling or blending them releases their nutty flavour while leaving some texture in the finished dressing.
Japanese Mayo
We use Kewpie Japanese mayonnaise or the Creamy Japanese Mayo from SkinnyAsia 2.
Japanese mayo has a rich, creamy flavour that works beautifully with sesame, soy and rice wine vinegar.
If substituting another mayonnaise, the final flavour may be slightly different but it will still make a delicious dressing.
More Ways to Use It
Don’t save this one just for lettuce!
Try it:
- Drizzled over a simple side salad
- As a dip for cucumber and carrot sticks
- Tossed through wilted, well-drained spinach
- Over steamed or blanched vegetables
- With shredded cabbage
- Drizzled over a rice bowl
Storage
Store refrigerated in an airtight container for up to 2 weeks when made with store-bought mayonnaise, or up to 5 days with homemade mayonnaise.
Give the dressing a good stir or shake before serving.
Dietary & Recipe Variations
LOW CARB
Use compliant sweetener and replace the mirin as specified in SkinnyAsia 2.
SUPER SKINNY
Use lower-fat Japanese mayonnaise.
PALEO
Replace the rice wine vinegar and mirin using the substitutions in the book.
LOW FODMAP
Use a compliant Japanese-style or whole egg mayonnaise.
HALVED / DOUBLED
This recipe can easily be halved or doubled.

Yes. Kewpie gives the dressing its distinctive rich Japanese-style flavour, but another creamy mayonnaise can be used if that’s what you have.
