Skinnymixers Greek Salad

Greek Salad is something so simple and obvious to me, that I never thought to do a recipe for it on the website until I asked in the Skinnymixer’s Facebook Group the other day and had hundreds of Skinnies wanting my recipe.

I love to serve this Greek Salad with a beautiful reverse seared Steak, Greek Slow Cooked Lamb or a simple grilled fish or chicken.

Try to make this salad an hour ahead of serving to allow the flavours to marinate.

Ingredients

Dressing Ingredients

  • 1 clove garlic
  • 80 g light tasting olive oil
  • 40 g red wine vinegar - Up to 60 g
  • 10 g Dijon mustard
  • 2 tsp dried oregano flakes
  • 2 large pinches salt
  • 1 pinch freshly cracked black pepper

Salad Ingredients

  • 1 medium Lebanese cucumber - seeds removed (optional), roughly chopped
  • 250 g baby tomatoes - seeds removed (optional), sliced in half
  • ½ red onion - peeled, thinly sliced
  • 100 g kalamata olives
  • 100 g feta of choice - cubed (I like Danish or Bulgarian)

Instructions

  • Add dressing ingredients to mixer bowl, blend 1 min/speed 7/MC on. Repeat if required.
  • Add salad ingredients to serving bowl and stir through dressing. Let it sit for 1hr before serving.

    First time I’ve ever made a Greek salad because I am bad at salads in general. But, I decided to make this even though the only ingredient my children will eat is the cucumber. So, they get none and I’m taking it to work to share with a colleague. My sample taste was amazing, I am looking forward to lunch tomorrow.

    CROWD PLEASER EVERY TIME! Plus- if there are any leftovers- toss through any veges you have- add chicken- bake for 15 minutes- then add more feta & grill til golden- MOST DELICIOUS TRAY BAKE EVER! Thanks Nik!

    I hadn’t made a Greek Salad before making this one and OMG, I will never try another one! The kids love it and we have it regularly with Skinnymixers souvlaki chicken and pita bread.

    This is am amazing recipe and so easy to make. It takes me back to my highschool years when i worked as a waitress at a greek restaurant. I’ve always longed for that authentic greek salad and here it is. I love it and make it atleast twice a week.

  5. We have been having this weekly since it was released, its so quick and easy.. a nice change from lettuce salad…

    Accidently used red wine instead of red wine vinegar and it still tasted good.. if not better with the wine then the vinegar lol. Oops
