Skinnymixers Chunky Spaghetti Bolognese Thermomix

The skinnymixer’s Chunky Bolognese has been a popular recipe on the Thermomix Recipe Community for a few years now, and has some fantastic 5 star reviews. Recently I asked the community who felt like they were not using their Thermomix or Bellini as much as they thought they should be, nearly 3,000 people responded…

and so I launched a new initiative called Simple Meal Sunday, to inspire and encourage people to use their machines more. This spaghetti recipe is fantastic because its simple, healthy and budget friendly. It can also be reinvented into so many different kinds of meals, from Chilli Con Carne (using my Mexican Spice Mix), to Shepherds Pie (using my Silky Sweet Potato Mash) to name a few.

I have included both the low calorie/quick version which is HCG compliant and a version using fresh ingredients.

Skinnymixers Chunky Spaghetti Bolognese Thermomix

Chunky Bolognese

Ingredients

  • 1 tsp onion powder - or 1 medium brown onion, peeled and halved.
  • 1 tsp garlic powder - or 1 garlic clove peeled
  • 20 g olive oil - omit for quick version
  • 700 g tomato sugo/passata - from the supermarket
  • 50 g tomato paste
  • 30 g water
  • 20 g worcestershire sauce - optional, omit for p2
  • 1 tbsp stock concentrate
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8 tsp cinnamon
  • 1/2 tsp dried chilli flakes - (optional)
  • pinch cracked black pepper
  • 700 g beef mince

Instructions

Quick & Low Calorie Bolognese

  • Add all ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on. or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Fresh Ingredient Bolognese

  • Add your onion and garlic to the mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add olive oil to mixer bowl and cook for 5 min/100°C or 212°F/speed 2/MC off.
  • Add remaining ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Notes

This makes a large serve of bolognese, which will comfortably serve 6.
Smaller serve: You can halve this recipe by halving all of the ingredients and reducing the cooking time by about 3 minutes.
You can use chicken, pork or lamb mince as well.

Quick & Low Calorie Bolognese
Use blunt blade for this recipe.
At step 2 & step 3 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.
Fresh Ingredient Bolognese
Use blunt blade for this recipe.
At step 2 increase cooking time if needed.
At step 4 & 5 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.

  3. I have a tm6. Had no idea how to do the cooking part of steps where i have to steam for 15 mins and then again for another 15 t 20. All i can here with the right hand dial set at 3.0 is a lot of bubbling. On 4 I thought this is going to cook the crap it of the sauce. The instructions are not for new users

    1. This recipe is available on Cookidoo as guided cooking for the TM6 if it helps? Steaming temp is varoma – we cater for other machines, not just the Thermomix with the instructions x

  6. Still new to Thermomix cooking. Tried this Skinnymixers Chuncky Bolognaise.
    OMG!!! Delicious!!! I read peoples comments before I started. So I added a little extra of suggested ingredients.
    The chilli flakes give it a beautiful kick.

    I made this via cookidoo, and we quite enjoyed it. I did add extra garlic, as well as 2 carrots, two-thirds of a zucchini and a 1.5inch thick slab of eggplant when I did the onion to use up some crisper items and up the veggie content. It did make for a rather full bowl, though no leakage happened.

    I got 3 serves for me (larger than I would normally eat) and 3 XL serves for my husband.

    I think next time I’ll add slightly more tomato paste as I’d like a bit more tomato flavour (although perhaps it would have been enough if I didn’t add the extra veggies)

    Made this tonight. My 3 boys gave it 10/10.
    Hubby who hates spaghetti Bolognese loved it.

    I added extra garlic cloves and some bacon in the at the start with the onion and garlic. Will add a little more chilli for our taste next time.

  9. Hey, I tried the spag bog last nite for the first time. I cooked it for the first 15min ok. Then when I put it back on the blades were hitting the basket? I couldn’t work out how to make this stop so had to finish it off in the fry pan. Can anyone help with what might be wrong? What temp is Steam? Is it Varoma!

  10. I made the full ingredient version with a few changes. I didn’t have passata in the cupboard so I threw in a can of diced tomatoes and topped up the rest with red wine. I’d probably increase the tomato paste to make it a bit richer as it has quite a vege taste, which was fine but my family likes a rich thick tomatoey sauce.. When the mince was cooked in the steamer, I put it back into the sauce and put the Thermie onto about 75 degrees and into reverse function just to stir it. I also thickened it at the end with some cornflour paste. My family though it was awesome!!

  11. Amazing! First time making sauce from scratch and it’s so good. Combined with the carbonara sauce it made an amazing lasagne. Will be adding this to the regular meal list!

  12. I’m sorry Bly halfway through cooking but already my TM31 bowl looks very full. The only extra I added was a carrot & zucchini. Is this right? Thanks skinnies x

    1. Yes, the carrot and zucchini makes a big difference in bowl capacity in tm31 – just leave it out next time, will be delish without it!

    1. P2 is for anyone doing Changing habits HCG. P2 hands for phase 2 which is in the diet/protocol. If your not doing HCG, then ignore this.

    This spag bol is delicous and it tastes the same each time I make it (probably because I never add extra ingredients). I have made this so many times now that I know it off by heart. Makes the best lasanga too with your cauliflower cabonara sauce turned into a beschmal sauce.

    1. Thank you for the lasagne tip! I also add extra ingredients. Carrot and celery today as I only had 500g turkey mince so that made up to 700g but I added the veggies at the first step 😊

  15. Delicious!! When I first got my thermie I made bolognese from the BCB, we hated the consistency and it really lacked flavour. So I was hesitant in trying this recipe, it was so great!! I really loved the hint of chilli in it too.

  16. I had to write a review after my picky 3 year old just ate her 3rd helping! Will have to add some Vege next time for extra nutrients I think. So glad she has finally eaten some meat though. Loving my P2 version too. Thanks Nik!

  18. I don’t know how many times I’ve made this, but its seriously one of our “go to meals”. Its super tasty, and super easy to make! My 3 year old doesn’t like the texture of meat, so its easy for her to pick out the chunky bits of mince.
    I also love it, cause I can hide zucchini/carrot, finely grated into the sauce without her knowing.
    Love it!

  20. We’ve had our Thermo for about 4 years now. It’s spent the past several months being an over-priced blender. Decided to dust it off and try this recipe for the fambamz. Have to say, considering all the rave reviews on it, was really nonplussed. The kids are pushing it around their plates, husband and I grudgingly ate it coz we were darn hungry. Found the flavour quite flat, the cinnamon was just a weird taste/smell, and there just seemed to be something missing. I’m not sure whether all the reviews on here are positive for the actual recipe, or just the recipe designer.

    1. Haha oh dear dont insult the recipe developer haha i have fed this dish to a few people and even our lil fussy 2 year old loves it. Did you put in roo much cinnamon maybe?

    2. I’ve had a thermomix for just under a year and I have to admit it did not change my life like others rave about. I also only cook things that taste good.. And I cook this one alot! It’s so yummy! I can’t even taste the cinnamon… I sometimes do it without the meat and use the sauce for homemade ravioli.

    3. didn’t add the cinnamon but did everything else and I found it really really yummy. I made the one with real onion and garlic not powdered stuff though.

      not every recipe appeals to everyone. but these reviews would be honest.
      Im super fussy usually but I LOVE most of nik’s recipes which is a great surprise for me.

  21. Just want to say how much we all love this. Mummy was unable to walk the other week with stitches so daddy made old style spag bog. Oh dear!!! No one wanted to eat it as wasn’t the skinny spag bog! Everyone is happy tonight mummy back cooking our normal!!
    I’ve also done with chicken mince, added zucchini, lemon zest, carrot and is delish.

  23. This is perfect for us as our daughter doesn’t eat meat so we always have meat free pasta sauce. Now I can serve hers before adding the sauce to the mince. The texture and flavour was really nice. Will definitely make this again.

  24. In love with this dish. I always add the healthy carbonara sauce from THM and now make a lasagne with eggplant or sliced zucchini in place of pasta. As soon as I can get a zoodle machine, I’ll serve those, too. Blissful. I also grated cheese in my saucy bowl to give it some extra flavour. Turbo boost 2-3 times and it collected all the sauce from the bowl…..cooking now and can’t wait to try my latest variation 😊

  27. I’ve made this twice now and using both methods.
    First time was following the quick version and although it was delicious I was not a fan of the cinnamon but hubby loved it.
    Second time round I used all fresh ingredients and added a carrot, zucchini and mushrooms and omitted the cinnamon and… AMAZING!!!
    This will be my go to Bolognese recipe from now on!

  28. I’ll admit it… I thought the skinnymixer’s who were making this and talking about how amazing it was were previously terrible cooks… Seriously, bolognese that’s amazing… Really guys?
    Then I made it.
    It’s incredible! It’s deep and has a little kick to it, and spice and… It’s just good! It’s even better if you make the carbonara sauce from The Healthy Mix and serve with spaghetti too. It made plenty for my HUGE eating man and I, (he had a bowl of mostly bolognese and carbonara as seconds too), and then there was still enough to make a lasagne for him to take to work as a few lunches this week.
    I can’t wait to make this one again, it’s going on the list of favourites!

  30. We made this last night for dinner. My kids are picky with their spag Bol, so I got my 5yo to help make it. Kids ate the lot, and so did the adults. It was very tasty. I just used half the cinnamon, and next time I might add some veggies. Will definitely cook again.

  32. Loved this recipe as apposed to the EDC which isn’t that appealing on the tastebuds.
    I had a bit of time over a coffee and made little meatballs instead of placing all the mince in the basket and having to chop up into chunks. Worked a treat. Everyone enjoyed the flavours. Thank you, another winner.

  33. I too added a carrot and zucchini in with the onion and garlic for extra veg. Only used 500g mince but the recipe definitely needs 700g to be chunky!
    Swapped the water for wine… Because wine!
    Also added salt and 2tsp sugar to cut through the tomato. Winner!!

  34. I have yet to be convinced that meat in the TM is that great…until tonight! I must admit, I was pretty wary about trying this. My last spag recipe in the TM was pretty ordinary…watery and bland. Kids and hubby were less than impressed with that one. For tonight’s effort I used the fresh ingredient version, didn’t omit any ingredients although I did have to substitute the dried basil with fresh, because I didn’t have dried, and it came out beautifully! Kids and hubby are theirs with pasta and I had mine with zoodles. So good!! One of the kids has requested it become a weekly event! Even the hubby, who still refuses to acknowledge the TM’s existence in the kitchen, was impressed. Thanks for a great recipe Nikalene!

    I made zoodles for me & cooked in varoma on 2nd set of 10-15 mins. Worked a treat. So full.

I was pretty skeptical at first as I swore I would NEVER make bolognaise in my thermie again after the tasteless, mushy attempt from the EDC… Your version was a pleasant surprise that I will definately be making again. I also love that its Phase 2 complaint, I served mine with zoodles & was able to enjoy spaghetti night with family while staying on protocol. THANK YOU!!!

  41. This was so so delicious! I don’t know how anyone couldn’t like it. I used a chicken stock concentrate jelly instead of stock paste and it made it so scrumptious!!! Unfortunately my sauce cooked a little to the bottom of the bowl so I might need to reduce cooking time but I cant wait to make this again.   45. Been a bit scared to try this recipe as other bolognese recipes I’ve tried in the thermie haven’t been great. This one was a total hit, my husband (who was a chef) said its the best bolognese he’s ever had and 12 yo asked me to never make it any other way again 😀

    We’ve always enjoyed bolognese as a regular family meal, and I’ve always cooked it the same way without needing a recipe. I’ve only recently purchased my thermi and without a doubt, I will never cook bolognese the “regular” way with my old recipe. The meat was so soft, the sauce was amazing and the flavours were just incredible. My husband has said its the best bolognese he’s ever eaten. Thank you for your incredible recipes!

  51. This was requested by my now nine year old for her birthday dinner and devoured by all! I leave the chilli flakes out (hubby adds them on his later) and usually add some diced veges/peas/corn/carrots for the last 20 minutes. Just yum.   56. I love this, my husband loves this, my kids love this. So much easier than sitting at the hot stove stirring the mince so it doesn’t burn. Made quickly and tasted so much better than any other spag Bol I had made. Give it a go you won’t be disappointed.

  60. This is the first spag bol recipe in the thermie that my husband has asked for again! It is on the menu plan most weeks coz the kids love it too!

  61. I made this last night and was quite sceptical as I love a good rich bolognese that simmers for hours. This will most definitely be out in rotation now on or menu! Perfect when I don’t have time or the inclination to spend hours watching the pot. Really impressed with this dish.

  67. My family love this spag bol sauce. It does make a good amount and I will often have the leftovers for my lunch the next day if it hasn’t all been gobbled up by Hubby or Miss 13. I often omit pasta and cook zoodles in the veroma for the last 10 min of the cooking time.

  70. I was a little disappointed in this after reading so many positive reviews. I must admit that I forgot to add the stock paste so perhaps this is why I found it a little bland. I don’t really think you can beat a slow cooked spaghetti Bol sauce on the stove top. Sorry, I really wanted to like.

  71. This was super easy but it was absolutely horrible, I can think of many things that taste nicer including but not limited to chicken flavored 2 min noodles. Plane pasta with wollies homebrand tomato sauce. A week old cold maccas cheeseburger and uncooked Brusselsprots. All I can hope for now is that by the time i wake up in the morning the taste of that will be finally gone.

  74. I would love to try this as a shepherd’s pie as you suggest in the intro. Other than making this and then the silky sweet potato mash and placing one on top of the other, what is the recommended time in the oven to brown the top etc as I assume it won’t need additional cooking????

  78. Oh my goodness! This is AMAZING BOLOGNESE! I’ve tried a few BOLOGNESE recipes and was totally disappointed by the lack of flavour! Tried this one and BAM! Everyone loved this recipe. Miss 13 has requested less chilli next time – and I’ll add more veggies and some canned lentils! Perfect Friday night tea!

    This was something awesome… I overdid it on the chilli so miss 11 thought it was a bit spicy… I just told her it had no chilli and she was happy and ate it anyway.. lol..

  80. I was a bit hesitant to make this dish as I read chunky bolognaise as lumpy mince.
    I decided to push through my skepticism and try it anyway.

    I had some nice grass fed beef mince so I reduced the amount of meat to 500g but added some Swiss brown mushrooms, dice capsicum and zuchinni to the sauce to bulk it up.

    I used to think I made a good bolognaise but I hang my head in shame at what I Had thought was good..

    This was spectacular – truly!

    I hate having leftovers – too much good food in this world to eat the same thing two nights in a row, but I ate this two nights in a row.

    This will be how I always prepare my bolognaise from now on.

  83. Yum! Finally a TMX bolognese that is close to how I cook it on the stovetop. This was so delicious and easy. I added in some veggies as well and it was a hit! No crumbly mince and lovely and rich.

  84. Wow! I am so impressed with this bolognaise. It was rich and full of flavour. I served it with zucchini noodles for me and on a bed of mashed potato for my daughter. I’ve made a different version of bolognaise for years (not in the Thermie) and always enjoyed it but this one is on a whole different level. This is going to be a regular on our menu from now on.

  86. I made this as I’m P2 HCG and craving some comfort food. I had given up any mince dishes in my thermomix because I didn’t like the texture but the steam basket for the mince was fantastic and because I am moving house this week not having the mess of bolognese sauce splattering on the stove and splash back was awesome. Can’t wait to try this with the Worcestershire and cheese!

  88. Made this tonight. OMG seriously the best bolognaise I have ever had. And it was a serious hit with the kids so definitely will be a regular in this house. Made my own passata for it too which I think added to the flavour. Yum.

  89. Dumb question but I rarely use stock.. Do I add water with the 1tbs stock concentrate?! Or is the 30g in the ingredients enough? Lol!

  92. I made this as part of the Simple Meal Sunday event. Good quality beef mince is not cheap here (Malaysia) but I’m so glad I splurged. This recipe made a laugh for 3 meals with leftovers for easy weeknight meals. I used the sauce with spaghetti and also as a topping in a cheesy baked pasta. Love your recipes!

  97. This recipe converted me from a Bolongsise hater to a lover. It’s tasty, easy & a hit all round. I only had half the mince suggested in the recipe so I added diced veggies to make up the weight & cooked in the varoma at the same time.

  98. Simple meal Saturday here and it was delicious!!

    Didn’t have enough passata so used tinned tomatos instead and held off on the chilli flakes for the two year old.

    Served it with zucchini and carrot noodles and some pasta and it was delicious! Thank you for another easy that gives the illusion of talent in the kitchen.

  104. Tried this tonight after having fails with spag Bol in the Thermie before. It was fantastic! The kids loved it and I added some grated carrot to the bowl at the start and served with zoodles for added veg. Will be making this a regular in our house!

  105. i was wondering if anyone would know calorie content of this compared to skinnymixer meatball recipe? I made that last week with the zoodles it was delicious but if this was lighter in calories I would try this as well? Thanks

  106. We LOVE this meal in our house! I make it weekly as its my girls all time fave spag bog recipe. After making mushy spag bog twice in the TM I gave up, until I found this. It’s delicious, incredibly simple & I add grated carrot & zucchini in the last 10 minutes to get some veggies in 🙂 thanks Nik for such a winner x

  107. I tried to convert my normal bolognaise to the tmx and had an awful purée outcome that was inedible. Then I tried this and it’s even better than my original stovetop!! Kids loved it too. The cinnamon is the winning secret ingredient I think!

      1. I find mince in the bowl goes grainy. Even in reverse it gets too chopped up. I find on the basket the sauce still bubbles through bi the mince isn’t hacked by the blades. I find it much tastier.

    1. It does still cook in the sauce, even though it’s in the steamer basket. I was amazed – combination of speed four and varoma temp, the sauce bubbles up all through the mince. I’m a convert!

    1. I added a carrot and mushrooms, there wasnt room in the basket for the mushies so they did get pulverised! But sooooo delish, this will be a regular in our house!
