During recipe development for our Dinners 4 cookbook, this Golden Vegetable Mash was made to accompany the Creamy Dijon Chicken with Greens.
When we came up with the concept for Dinners 4, we wanted to deliver as much value as possible for the community and made the decision to not include the side dishes and desserts in the book.
Instead we thought we would release them as complementary free recipes.
This golden vegetable mash is a healthy twist on classic mashed potatoes. Itās packed with carrot, pumpkin and sweet potato, making it perfect for family-friendly meals.

Ingredients
- 250 g pumpkin - cubed small
- 250 g sweet potato - cubed small
- 100 g carrot - cubed small
- 50 g cream - of choice
- 30 g butter - cubed (dairy-free if required)
- 1 tsp salt
- 1/2 tsp onion powder
Instructions
- Add 1000 g water to mixer bowl. Add vegetables to steaming basket and insert into mixing bowl. Steam for 20 min/steaming temp/speedĀ 4/MC on or until cooked.
- Discard water. Add steamed vegetables to the bowl with the remaining ingredients and mix for 20 sec/speed 5/MC on.
Notes
Serve with Creamy Dijon Chicken & Greens.
