For those wondering about my Mum’s Famous Cucumber Salad on the back of SkinnyEntertaining 🙂 This was a SURPRISE to me.
Sian approached my mama and asked her to write a testimonial for the back of the book and she sneakily added in my mum’s famous recipe as an easter egg! It is crazy simple, so I thought I would share it with everyone on the blog also as a free recipe.

P.S. Make sure you allow it time to marinate in the fridge for the flavours to develop.
This cucumber salad is dairy free, gluten free, paleo, low carb, egg free, super skinny and can easily be halved, doubled or tripled.
Ingredients
- 300 g cucumber - , sliced or quartered (peeled is optional)
- 1 Tbsp olive oil - good quality
- 1 tsp white vinegar
- ½ tsp salt
Instructions
- Combine everything in a bowl and allow to marinate for at least 1 hr before serving.
