Sometimes you just need a warm bowl of something simple and comforting, and Egg Drop Soup is exactly that.

This Chinese-inspired soup has delicate ribbons of egg running through a savoury golden broth made using our famous Chicken Stock Concentrate, with ginger, white pepper, spring onion and a little sesame oil.

It’s quick too. With just 5 minutes prep and 15 minutes cooking, you can have a steaming bowl on the table in around 20 minutes. This soup is best fresh.

What is Egg Drop Soup?

Egg Drop Soup is a Chinese soup known for the delicate ribbons of egg suspended throughout the hot broth.

The beaten egg is slowly drizzled into the soup towards the end of cooking. As it hits the hot broth, it cooks almost immediately and forms those characteristic silky strands.

Our version uses Chicken Stock Concentrate, soy sauce, ginger and white pepper for the savoury broth, with a little turmeric for its gorgeous golden colour.

What ingredients you will need

The complete recipe, quantities and methods are in SkinnyAsia 2, but you only need a handful of simple ingredients:

  • Eggs
  • Chicken Stock Concentrate
  • Soy sauce, tamari or coconut aminos
  • Ginger
  • Ground white pepper
  • Turmeric
  • Cornflour or xanthan gum
  • Sesame oil
  • Spring onion

How Do You Make the Silky Egg Ribbons?

It’s much easier than it looks.

The eggs are whisked first, then slowly drizzled into the hot soup towards the end of cooking.

The trick is to add the egg gradually rather than pouring it all in at once. This allows it to set into delicate ribbons as it hits the hot broth.

We’ve included instructions for creating the egg ribbons using both the Thermo cooker and conventional methods.

Why Add Turmeric to Egg Drop Soup?

Just a small amount of turmeric gives our Egg Drop Soup its beautiful golden colour.

We’re only using a quarter of a teaspoon, so it isn’t there to make the soup taste strongly of turmeric. It works alongside the ginger, white pepper and sesame oil while giving the broth that gorgeous colour.

Fresh Ginger or Ginger Powder?

Either works.

The recipe includes the option of using ginger powder or fresh ginger, so you can use whichever you already have at home.

Fresh ginger gives you that lovely fresh warmth, while ginger powder makes this an especially convenient pantry-friendly recipe.

Dietary & Recipe Variations

EGG FREE
Yes, even Egg Drop Soup can be made egg free! Omit the eggs and use a vegetable peeler to make thin tofu ribbons, adding them during the final few minutes of cooking.

LOW CARB / PALEO
Replace the cornflour mixture with xanthan gum to thicken the soup.

SUPER SKINNY
Use the lower amount of sesame oil.

VEGETARIAN
Use Vegetable Stock Concentrate instead of Chicken Stock Concentrate.

LOW FODMAP
Use compliant Stock Concentrate and only the green tops of the spring onion.

HALVED / DOUBLED
This recipe can be halved or doubled. If halving, use two eggs.

What to Serve with Egg Drop Soup

Serve your Egg Drop Soup immediately while it’s piping hot.

Finish each bowl with sliced spring onion and a small drizzle of sesame oil.

Enjoy it on its own for a quick lunch or light meal, or serve smaller bowls alongside some of the Chinese-inspired dishes from SkinnyAsia 2 for a bigger feast. This soup is best served fresh and doesn’t freeze well.
