Bacon & Vegetable Soup is the recipe that started it all – Inspired by Maddy from Forum Thermomix, this is the first recipe I ever released on the Skinnymixers Facebook Group and a very popular one ever since.

It is a hearty, filling and nourishing soup without the calories. Super budget friendly and you can utilise whatever vegetables that you have in the fridge.

The Bacon & Vegetable Soup recipe is a free recipe and it also features in The Healthy Mix Cookbook with updated variations for different dietary needs. Gluten free, dairy free and can easily be made vegetarian, LCHF or Keto.

This quick, delicious Thermomix Soup recipe features in The Healthy Mix Cookbook and was one of the original Skinnymixers recipe on the blog.

Ingredients

  • 500 g chopped vegetables - zucchini, carrot, celery, mushroom
  • 1 brown onion - quartered
  • 2 cloves of garlic - peeled
  • 60 g diced shortcut bacon
  • 20 g olive oil
  • 2 tbsp stock concentrate + 1000 g or 35.3 oz water - or 1 litre or 33.8 fl oz liquid stock
  • 140 g tomato paste
  • black pepper to taste
  • 80 g small shell pasta - optional - omit for grain free, LCHF or Keto version
  • lemon zest and chopped parsley for serving

Instructions

  • If you want your vegetables to be uniform, dice as desired - otherwise add roughly chopped vegetables to mixer bowl and chop for 5 sec/speed 4/MC on. Set aside.
  • Without washing the bowl, add onion and garlic, chop for 5 sec/speed 5/MC on.
  • Scrape bowl down, add oil and diced bacon. Cook for 5 min/100°C or 212°F/speed 1/MC off.
  • Add stock concentrate, water, reserved vegetables, tomato paste and black pepper. Cook for 13 min/100°C or 212°F/speed 1/reverse/MC on.
  • Add pasta if using and cook for 7 min/100°C or 212°F/speed 1/MC on.
  • Serve with grated lemon zest and chopped parsley.

Notes

The nutritional information for this recipe includes the pasta.
 
Bellini Users
Use blunt blade with this recipe.
At step 1 chop for longer if required.
At step 5 check pasta is done and extend cooking time if necessary.

    Made this today without the pasta and only 2 lightsprays of MCT coconut oil…. Added a little chilli and made egg ribbons as the pasta… so very very delightful… NIK I can’t believe I have only made this after all these years of following you and living all your recipes 💝

  2. I followed the recipe but didn’t add the lemon zest at the end, added a pinch of chilli flakes to my bowl. Yummo!

  3. My husband firmly believes soup is an appetiser, not a main, however even he gobbled this down when I cooked it earlier in the week – bacon clearly makes everything better!

    A great way to clean out the crisper drawer of old veggies (I used chilli, carrot, capsicum, celery and zucchini), and I used GF pasta in the relevant step (next time I’ll add a little more).

  7. I’m not a huge soup eater (after a traumatic experience with tomato soup as a child!) but I love this soup. So versatile and I use up whatever is lurking in the refrigerator. Yum!

  12. Yum! Love that I can use up leftover vegetables (made it with zucchini, carrot, purple cabbage, celery and a tiny bit of potato) with this recipe. We sprinkled a little Parmesan on top.

  13. Oh my goodness- I made a soup that my kids are without complaint!! (Well, 3 out of 4 anyway).

    Filling and enough for my husband to have 2 big serves, 1 big serve for me, smaller ones for the 4 kids (between 7 and 10 months). No leftovers.
    I doubled the bacon and added grated parmesan on top. So good!!

Thank you Nik, I have been looking at this recipe for some time and made it yesterday for lunch with nitrate free bacon, leftover leeks, celery, broccoli stalk, carrot and swiss brown mushrooms. I also used chicken stock from a steamed chicken the day prior. Oh my, such flavour and filling. My dog sat beside me in hopeful anticipation! A winner all round.

  15. This is only the second thing I’ve made in my mistral kitchen machine, and it didn’t dissapoint! I had to chop the veges for longer but other than that the recipe was fine for my machine. I did use more bacon, veges I used were zucchini, carrot and celery. I also used 1litre of chicken stock instead of vege. Will definitely be making this again!

  17. OMG loved this, thought it might be bland (sorry nik) but it is absolutely amazing!! I add some cut up chunks of cheddar to the bowl before serving for a nice goey cheesy bite every now & then (something my husband does with tomato soup that I thought sounded crazy until I tried it myself)! Yum, going to stock up freezer, may eat nothing else but this for lunch this winter!! Keep up the great work skinnymixers!
