I don’t say this very often, but I think the Mini Beef Wellingtons in SkinnyEntertaining are definitely one of the top 3 recipes I have ever developed.
I really, really, really love this recipe I sincerely hope that when people get SkinnyEntertaining they make time to cook & enjoy these little parcels of deliciousness! I highly recommend making the Red Wine Jus to serve with them.
How to wrap Beef Wellingtons:
- On a sheet of cling wrap, lay out 3 slices of prosciutto, slightly overlapping.
- Spread 1 half of your mushroom duxelles evenly over your prosciutto.
- Put your prepared beef in the centre, and using your cling wrap fold your prosciutto around your steak.
- Take your puff pastry and place your prosciutto wrapped steak in the centre.
- Fold your pastry around your beef, trimming excess pastry off as you go.
- At this stage you can decorate your Wellington using excess puff pastry.
