I don’t say this very often, but I think the Mini Beef Wellingtons in SkinnyEntertaining are definitely one of the top 3 recipes I have ever developed.

I really, really, really love this recipe ðŸ¥° I sincerely hope that when people get SkinnyEntertaining they make time to cook & enjoy these little parcels of deliciousness! I highly recommend making the Red Wine Jus to serve with them.

How to wrap Beef Wellingtons:

  • On a sheet of cling wrap, lay out 3 slices of prosciutto, slightly overlapping.
  • Spread 1 half of your mushroom duxelles evenly over your prosciutto.
  • Put your prepared beef in the centre, and using your cling wrap fold your prosciutto around your steak.
  • Take your puff pastry and place your prosciutto wrapped steak in the centre.
  • Fold your pastry around your beef, trimming excess pastry off as you go.
  • At this stage you can decorate your Wellington using excess puff pastry.

  • Texas Black Beef Rub
  • olive oil
  • shallot
  • mixed mushrooms
  • dried porcini
  • butter or olive oil
  • light soy sauce, tamari or coconut aminos
  • Cognac, brandy or dry white wine
  • onion powder
  • garlic powder
  • dried thyme
  • ground white pepper
  • prosciutto
  • puff pastry - gluten-free if required
  • egg

    This recipe was absolutely phenomenal! I had never cooked a beef Wellington before and appreciated the tips along to way to compare consistency and to make sure the pastry didn’t go soggy. I used fresh garlic and thyme instead but still worked out. It turned out full of flavour, deliciously crispy pastry and delightfully satisfied bellies.
