What ingredients you will need
- 500-700g beef mince

- brown sugar or coconut sugar

- gochujang paste (gluten-free if required) – The Woolworth’s gochujang is gluten free but very spicy. The Coles gochujang is milder but not gluten-free. You can get a wide range of different spice level gochujang from Asian supermarkets. We also have a dietary friendly recipe for gochujang.

- fresh shiitake mushrooms – if fresh isn’t available, you can also rehydrate some dried shiitake with boiling water before stir frying them.
- olive oil
- rice

Tips & Dietary Needs
- Protein swap – Feel free to swap for thinly sliced steak or chicken thigh. You could also use chicken, pork or lamb mince.
- Don’t like bean sprouts or mushrooms? No problem! Just leave them out and assemble the bowl with your choice of salad/vegetables.
- Boost the protein – Stir fry the rice with additional egg whites.
- Gluten-free – check that your gochujang is gluten-free. You can get a GF one at Woolworths (pictured above) or Asian supermarkets.
- Egg-free – simply omit the egg.
- Low carb – replace rice with cauliflower rice and use compliant sauces/sweeteners.
- Lower calorie – Halve gochujang, increase the vegetables, decrease the rice and use extra lean meat.
- Go veggie – Double the mushrooms and scrambled tofu is delicious in this recipe.
- Low Fodmap – Omit garlic and use 1 Tbsp garlic infused olive oil to pan-fry mince. Halve gochujang paste or use the compliant recipe on the website. Replace honey with maple syrup. Replace shiitake mushrooms with Oyster mushrooms and use green part only of spring onion. Omit Kimchi.
- Spice Level – You can buy different heat levels of gochujang paste, i.e. mild, spicy and extra spicy. Taste a little bit if you are worried and reduce the gochujang paste if required.
- What should i do with leftover bean sprouts? Make the Vietnamese Chicken Pho or Spring Roll Bowl.
How to Cook
- Mix the beef seasoning and bibimbap sauce.
- Cook rice and lightly steam the carrot, zucchini and bean sprouts.
- Brown beef mince, add seasoning, then sauté mushrooms alongside.
- Fry eggs to your liking.
- Assemble bowls with rice, beef, vegetables, egg, sauce and choice of toppings.
How to Serve
- Toppings – Fried eggs, sesame seeds, spring onion, cucumber, Kimchi (optional)
Storage & Meal Prep
- Fridge – Store in the fridge for up to 3 days.
- Freezer – Freeze the cooked mince with mushrooms. Everything should be fine to mix up and freeze, except the bean sprouts and cucumber.
- Batch prep – Freeze single portions of rice and cooked mince. Portion sauce in snaplock bags and freeze.
- Thawing from frozen: Let it sit in fridge overnight, then warm gently (or enjoy cold).
- Make ahead – Freeze cooked for up to three months.
