Ingredients

  • 90 g carrot - roughly chopped
  • 50 g red apple - roughly chopped
  • 400 g white and/or red cabbage - roughly chopped
  • 70 g whole egg mayonnaise
  • 50 g greek yoghurt
  • 2 tsp fresh lemon juice
  • 1/4 tsp salt or to taste
  • pinch of cracked pepper
  • pinch of paprika

Instructions

  • Add carrot to mixer bowl, chop 3 sec/speed 5/MC on.
  • Add remaining ingredients to mixer bowl, chop 4 sec/speed 5 while using spatula to incorporate.

Notes

Pairs great with grilled pork and a squeeze of fresh lemon juice for a summer dinner.
Dairy free / Whole30: omit the yoghurt

    Delicious. I used about 2tbsp of mayo and left out the Greek yoghurt as we prefer less dressing on salads. Really tasty, was perfect with the Za’atar chicken.

  4. Delish served with your smokey bbq beef ribs! Up there with the best meal I have served. The second time I made it I omitted the yogurt, added celery and half a green apple instead of red. The mayo was perfect too. Was a winner! Cant wait to try it with your pulled pork next!

  6. delicious! I made this on the weekend. Unfortunately neither of my kids (4&6) would eat it. But my fussy hubby loved it so much he took the all the left overs to work the following night for his dinner. This will be my go to salad this summer.

  11. I made this to go with the pulled pork. We loved the flavours but personally I would use less dressing as I like a drier coleslaw. Definitely a keeper….thanks Nic ❤️
