Maroulosalata (Greek lettuce salad) is all about — crisp lettuce, soft herbs, lemon, and olive oil — nothing heavy, nothing fussy, just fresh and vibrant.

This salad is one of the recipes I included in SkinnyMediterranean – my love letter to the Mediterranean lifestyle. It’s a reminder that Mediterranean food isn’t about carbs & heaviness — it’s about balance, bright ingredients, and making every bite count.

This is one of those really simple but impressive salads that really lifts any protein being served with it.

I prefer to use Bulgarian feta for the sharp taste, however Danish feta is a nice all-rounder.

I love to serve it with the Keftedes with Hidden Veg or Biktekia and Lemon Potato Bake.
