This is a fantastic dinner to prepare ahead of schedule and cut a slice to serve with some toppings or salad. It is especially great to have for easy lunches the next day. My daughter absolutely loved this one & my son requested I make it again without corn and beans… Feel free to adjust to your own personal preference.

Layers of rich, spiced mince, melty cheese in layers of high-protein chile con queso and soft tortillas stacked into one seriously addictive dinner. It looks impressive, but it’s actually so easy to throw together.
The kind of meal that disappears fast and gets requested again before you’ve even finished eating.
 

What ingredients you will need

  • 500g beef mince
  • 4 Flour tortillas or corn tortillas for gluten-free
  • Chicken Stock Concentrate
  • coriander powder
  • cottage cheese or ricotta

Tips & Dietary Needs

  • Protein swap – Feel free to use your mince of choice, including plant-mince
  • No Chicken Stock Concentrate? We highly recommend making Niks Chicken Stock Concentrate for best results! Vegetable stock concentrate will work. You can also replace the water with liquid stock. 
  • Don’t like beans or corn? No problem, just leave them out.
  • Dairy-free – Replace cottage cheese with silken tofu. Use dairy-free cheeses.
  • Gluten-free – Use corn tortillas, if they are smaller you can cut additional ones to cover a layer. Gluten-free tortillas can go soggy.
  • Egg-free – Replace with 2 Tbsp Greek yoghurt of choice.
  • Low carb – Replace tortillas with low carb tortillas or roasted zucchini ribbons. Omit beans and corn.
  • Lower calorie – Halve hard cheeses. Add cheese sauce to bottom and top layers only.
  • Paleo – Omit corn and beans. Make the meat sauce only and fill zucchini boats or capsicums (halved lengthways). Top with an egg in each and bake.
  • Go vegetarian – Use vegetable stock concentrate. Double the capsicum. Replace mince with 1 zucchini and 200 g or 7.1 oz Swiss brown mushrooms, diced. Double the beans.
  • Low Fodmap – Omit garlic powder and onion powder. Use garlic infused olive oil and add chopped spring onion (green part only) sprinkled in the layers. Use lactose-free cheese and compliant stock concentrate.
  • Spice Level – This isn’t spicy, but you could add some chipotle powder to it if you like!

How to Cook

  1. We make the meat sauce.
  2. Then mix together the high protein chile con queso.
  3. Then assemble the stack for tortillas and layers of sauces.
  4. Bake in the oven until set.

How to Serve

Storage & Meal Prep

  • Fridge – Store in the fridge for up to 3 days.
  • Freezer – Freeze, sliced in portions.
  • Thawing from frozen: Let it sit in fridge overnight, then warm gently (or enjoy cold).
  • Make ahead – freeze cooked for up to three months.
  • Lunchbox win – perfect for work lunches.

FAQs

Can I use gluten-free tortillas?
We recommend corn tortillas as the normal gluten-free tortillas go mushy.

Does it taste like cottage cheese?
Absolutely not, but it adds a great protein boost.
