Ingredients

  • 1 tbsp dried oregano flakes
  • 1 tbsp dried mild paprika
  • 1 tbsp dried marjoram
  • 1 tbsp dried ground cumin
  • 1 tbsp dried ground coriander
  • 1/2 tbsp dried onion powder
  • 1/2 tbsp dried garlic powder
  • 1/2 tbsp rock salt
  • 1 tsp dried chilli flakes - (more or less to taste)
  • 1 tsp peppercorns
  • 2 tbsp Crio Bru
  • 500-800 g | 17.6-28.2 oz chicken breasts

Instructions

  • Add all ingredients, except for the Crio Bru, to the mixer bowl. Mill for 30 sec/speed 9/MC on.
  • Add Crio Bru to the mixer bowl, combine for 5 sec/speed 5/MC on.
  • Coat chicken breasts liberally in spice mix and either cook in a 180°C or 350°F preheated air fryer for 12-15 mins, turning once or grill for 10.

  1. Could you use Crio grounds (from a previous brew) rather than straight from the pack? I’ve got plenty of grounds in the freezer from making a Crio Bru Concentrate and I’m always looking for uses for it.

  2. Made the Mexican crio rub this afternoon and dipped thin slices of chicken breast into it. Couldn’t be more simple but the taste was far from simple. A great success and a meal to be cooked again and again. I did put the spare mixture into a jar for later but I think it will be going with my daughter next week as she was totally taken with it. Thanks Nic.

  3. Fantastic tasty rub, used it on Marylands (cooked in air fryer 180 degrees for 35 minutes) instead of breast. Cant wait to try it on steak on the bbq.
