Bacon Wrapped Meatloaf with Smokey BBQ Sauce

Ingredients

Meatloaf:

  • small handful of parsley
  • 2 garlic cloves - peeled
  • 100 g carrot or zucchini - roughly chopped
  • 1 small onion - halved and peeled
  • 500 g beef mince - or preferred minced meat
  • 2 eggs
  • 10 g psyllium husk - or 1 cup bread crumbs
  • 1 tbsp salt
  • ΒΌ tsp cracked pepper
  • 1 tsp smoked paprika
  • 10 bacon rashers
  • 2 tbsp preferred frying oil

Smokey BBQ Sauce:

  • 30 g coconut sugar
  • 30 g butter
  • 120 g tomato sauce
  • 10 g tamari - or coconut aminos or worcestershire sauce
  • 10 g apple cider vinegar
  • 1 tsp cacao - or cocoa or instant coffee
  • 10 g lemon juice
  • 90 g water
  • 1 tsp smoked paprika

Instructions

  • Add parsley and garlic to mixer bowl, blitz for 3 sec/speed 9/MC on.
  • Add carrot and onion, chop for 3 sec/speed 6/MC on.
  • Add remaining meatloaf ingredients, except for bacon and oil, and pulse turbo 1 sec/5 times to roughly combine.
  • Remove meatloaf mixture to a silicone mat or large piece of aluminium foil and shape into a rounded meatloaf shape.
  • Wrap bacon rashers around meatloaf and secure in place with toothpicks.
  • Transfer meatloaf to large bottom steaming tray. It's okay if it bends up the sides.
  • Add 600 g or 21.2 oz water to mixer bowl and steam meatloaf for 45 min/steaming temp/speed 2/MC off. In the last 20 mins of steaming time, feel free to add vegetables around meatloaf to cook and serve.
  • With 5 mins remaining, heat preferred oil in a large frying pan to medium heat.
  • Transfer meatloaf to frying pan and brown on all sides.
  • While the meatloaf is browning, prepare smokey BBQ sauce with a clean bowl:
  • Add all sauce ingredients to mixer bowl, cook 5 min/steaming temperature/speed 2/MC off.
  • Remove toothpicks and serve meatloaf with steamed vegetables or salad and smokey BBQ sauce drizzled over the top.

Notes

I used smoked streaky bacon.
You can prepare the sauce standalone to use with other dishes.
I used Thermobextas *amazing* tomato sauce recipe for my sauce, in which I substitute the raw honey with coconut sugar πŸ™‚

    Thank you so very much for this recipe. I cooked it for the first time last night and OMG it was so good. The most amazing part was my fussy master 12 not having to drown everything in tomato sauce. I highly recommend this. I did put in a couple of cups of frozen veg that I blitzed up just to get some extra hidden veg into the meal.

  5. That was my first meatloaf ever as I have bad childhood memories- but it was seriously good, so much so that my 3 year old keeps calling it meat cake! I didn’t have enough breadcrumbs so used half a cup of chia seeds as well. I used store bought tomato sauce in the bbq sauce and needed to cook it for an extra five minutes to thicken. Thank you, a seriously good meal.

  6. YUM YUM YUM YUM YUM YUM YUM!! Have made this a couple times now – it is so good! Tonight I used lime juice as I didn’t have a lemon and I also doubled the sauce, and it turned out perfectly. Lots of leftovers too, which reheats beautifully, sliced up in the oven πŸ™‚

  10. I’ve made this a few times now and it tastes better every time. All kids and picky hubby even loved it. I just struggle with getting it from the varoma to the fry pan without falling apart but thats on me. I don’t think I put the bacon on tight enough!! πŸ˜‰

  11. From someone who doesn’t like meatloaf this was really nice. Made to the recipe. Couldn’t get the bacon to stay on but it still tasted the same.
    Sauce was quite sweet and I would halve the sugar next time.
    But saying that I would make it again is a big plus.

  13. I doubled this tonight and xooked the entire amount in the oven with the BBQ sauce on the top for about 1hr 20min with a pan of water in to create steam. Used 1/2 the sauce at the start then the other half about half way in the cooking time. Turned out wonderful. When serving i added some of the juices over the meat.

  15. Does anyone else think a tbsp of salt is too much? I made this last night and it’s sooiii salty it’s overpowering and almost too unpleasant to eat?

    1. Did you use pink himalayan salt, as that would make it saltier? 1 tbsp salt for 500g meat is a typical amount.

    2. Yes I think a tablespoon of salt seems a lot. Especially with the bacon. I wouldn’t add more than half a teaspoon. We aren’t big salt users so I always find I need to reduce the salt in recipes. For example we use very little salt in bread and recipes always call for quite a bit. I think it’s just what you get used to.

  17. Wow. Didn’t know how good meatloaf could taste! We even had for breakfast the next day. I used equal amounts of chicken and pork mince as I don’t eat beef. Used chia instead of husks and baked in oven for 1 hour. It was such an easy dinner. Might try hiding mushrooms next time.

    1. Did you use the same quantity of chia seeds as the psyllium husks? How did you go with adding mushrooms? I like your suggestions!

  18. Made this last week, first I made the Thermobexta amazing tomato sauce( which is amazing), I used bread crumbs and the streaky bacon as suggested. I wouldn’t mind a tutorial on how to wrap it all neatly. The taste was amazing and was lovely and moist everyone loved it, even my two year ate it all. Hubby had some extra to take to work as well.     1. I just made this. Following some comments here, I decided to bake it in the oven.
      I had nice wide smoked streaky bacon so laid foil in a rectangular baking dish, overlapped five strips of bacon across bottom and up the sides, and dumped the mince mixture down it (warning, there’s lots of filling). I laid two strips lengthwise down the loaf and then used the foil to roll the loaf, inside the bacon strips, until it was well covered with bacon. Baked it, slathered in sauce, at 190 for 45 minutes on fan forced, adding lots more sauce at half time (I made double quantity sauce but still have a lot).
      It worked a treat and my husband loved it.

  19. Wow! Hubby has never been a fan of meatloaf because it always goes dry and rubbery. He was amazed to find out this one is steamed and then finished in the pan. He had 5 slices, one after the other as soon as he came home from work. We are having it for dinner with French potato salad and green beans! Yum! I have another 500g of beef mince that will be used to make another tomorrow I think!

  20. I love this dish although I could definitely use a bacon-wrapping tutorial! Hubby likes it, especially the sauc, but dislikes the psyllium husks and an always tell that they are in this dish so next time I’ll try leaving them out.

  21. It was 38 today in Perth, so I whizzed this up before crossfit and served with a nice crispy salad.
    We really enjoyed it. The flavours of both the meatloaf and sauce are tasty.
    Also, I had all ingredients in the pantry, easy as!!!

    1. Yes. I cook it in the oven 190 fan forced at least 40 min and it was great except that I found it very salty

  23. Super scrumptious! Even Mr Fussy 8 ate and asked for more. I used peeled zucchini instead of carrot to hide the so called “yucky” bits. Served with mash and corn on the cob. πŸ˜‹πŸ˜‹

  24. I made 2 of these today, one for dinner and one (uncooked) to freeze. Seeing as they only have 500g mince in them I was a bit worried that our family of 2 ad 2 teens would be hungry so I was sure to make plenty of sides BUT I didn’t need to worry, this thing, fully assembled is massive!!!!

    Served 4 people, 2 serves of seconds and 1 very generous lunch for next day. Don’t forget I have an entire second one in the freezer so we can do it all again next week πŸ™‚
    The meatloaf was juicy and easy to carve and serve.

    I didn’t have any psyllium husk so replaces with ground chia seeds. Perfect.

  27. Oh… my… god… that sauce! It is so freaking good! I used cocoa powder as didnt have instant coffee, seriously delish. I did have to cook it for a lot longer to thicken it, but that may be because i have a bellini intelli, not a thermo. Make a quadruple batch and just put it all over EVERYTHING! Also thanks for pointing me in the firection of that tomato sauce recipe. Its a winner!

  34. This was so yummy!!! I served with heaps of veggies and I loved it. Can’t say the same for the kids in the house but that just meant I got their left overs the next day! They are fussy eaters so I would not put it down the taste, I’m still breaking them into new foods!!

  36. Delicious!! So easy to make I added both a zucchini and a carrot and it was lovely and moist…I actually cooked it in the oven instead of the varoma as I couldn’t find my varoma lid. Turned out fabulous!

  39. My family LOVED this, even I enjoyed every bit and I don’t usually like meatloaf. The bacon made it delicious! And that BBQ sauce was delicious! So much flavor. I didn’t add the coffee (because I didn’t have any left in the cupboard, oops) but it was still a sauce I felt like drinking, it tasted that good!

  40. Made this the other night and it turned out exactly as the picture shows! I was very impressed with how easy the recipe was for a visually impressive dish. The sauce is particularly yummy and everyone went back for seconds or thirds to pour over the veggies. Left overs of both reheated very nicely the following day for lunch.

    Fussy toddler who doesn’t like much meat. Hubby that loves hearty meaty meals and then there is me who is watching portion sizes etc. I could accommodate everyone. First meal in weeks I didn’t have to ‘encourage’ 2.5yr old to eat. She could also cut it herself which is an accomplishment right there.

  46. So yummy, I subtituted parsley for dried oregano and omitted the butter (because I forgot) and the coffee from the sauce. I didn’t have toothpicks so it felt apart a bit in the pan but the whole family loves this one. So easy to make too!

  50. Made this tonight with carrot and zucchini (50g of each) and used coriander instead of parlsey – just a little. Didn’t have any tomato sauce to use as a base for the sauce so used some preserved roast tomato and onion that I had. Came out quite runny and not very dark but tasted good! Meatloaf was fantastic πŸ™‚

  51. Best Meatloaf Ever! I added both a carrot and a zucchini and an extra 100g of mince because I had 5 adults and 2 kids to feed. It made it a little hard to handle but everyone loved it, especially the sauce. This is now our go to meatloaf recipe πŸ™‚
