Porcini Salt Thermomix Recipe

I was once gifted a gorgeous jar of Truffle Salt from a dear friend, and loved putting it on my eggs and fried mushrooms for breakfast… 

This is a great way to seriously boost the flavour of dishes, season vegetables and meat and to make fairly tasteless button mushrooms taste amazing – just fry in a little butter and finish with the Porcini Salt! You can find dried porcini mushrooms at quality fruit & vegetable grocers, markets and online.

Managed to find 5 beautiful porcini yesterday out in the wild – so I thought I would dehydrate them and then turn in to my porcini salt! I opted to use @maldonsalt flakes this time and to leave it “chunky” on step 2.
I don’t like eating fresh porcini due to the bugs… but I don’t mind dehydrating them and turning them in to salt!!

Ingredients

  • 40 g dried porcini mushrooms
  • 80 g rock salt

Instructions

  • Add porcini mushrooms to a very dry mixer bowl. Mill for 30 sec/speed 9/MC on.
  • Add rock salt to mixer bowl. Mill for 30 sec/speed 9/MC on.

Notes

Store in a jar in the fridge for 12 months.

  2. I made this on the weekend and it is divine. I added it to a tomato and bacon based pasta sauce I made last night and it made it taste better than ever. The extra kick provided from this salt mix lifts dishes to the next level.

  3. my packet of porcini mushrooms says that they should be cooked thoroughly before consuming as they are wild mushrooms and are without the horticultural controls of cultivated crops. Is this just over cautious or should we really not be using porcini sprinkled on top as a seasoning?

    1. You should be more concerned about other additives in processed foods than of wild mushrooms a totally natural food. Controlled growing situation is not natural…

  4. My packet says SANDHURST foods, which Woolworths and Coles sometimes stock. Some delicatessens stock that brand also…

  5. Can anyone tell me where they found the dried porcini mushrooms? I’ve looked at a few local places that I thought might have them but no luck so far.

  6. Hi, just love the look of this recipe for porcini salt. At the end it says to store in the fridge for at least one year. Do you have to wait a year for the flavours to develop or is it meant to say store for up to one year?
