We are so incredibly blessed that we were able to convince Grant Neal aka Hollywood from The Smoking Joint to share his award-winning Brisket recipe in SkinnyEntertaining.

How to Trim a Brisket:
- Starting with the underside brisket, using a very sharp knife trim off all excess fat you can see.
- It’s important to trim away from your body for safety.
- You can also place your hand under your brisket to hold it up, which makes it easier to trim some of the hard fat away.
- Begin to shape your brisket by cutting away any fatty edges. Save them to use for making brisket mince later on. This is amazing for smash burgers!
- Flip your brisket over to your presentation side trim any large flaps off from your point end.
- Trim any excess hard fat from between your point and flat.
- Lightly trim away fat until you begin to expose the muscle on the flat. You want to keep an even layer of fat for flavour. Trim the rest of the fat off of the point end, completely exposing the muscle.
- Shape your brisket by trimming the edges further.
- You now have a perfectly trimmed brisket ready to rub.
How to Rub a Brisket:
- Rub trimmed brisket with chosen binding agent, like Worcestershire sauce, mustard or olive oil.
- Sprinkle Beef Rub evenly over the underside, ensuring to cover the edges of your brisket too. You can be generous with your rub as brisket is a large cut of meat.
- Flip your brisket over and rub with binding agent, then continue to evenly sprinkle rub over the presentation side.

As part of our pre-sale for the cookbook SkinnyEntertaining, we did a special cook-along live event on Facebook to ‘Cook Hollywood’s Brisket with us!’ – yes it was over 14 hrs…call us crazy!
