What is Chargha Chicken?
This delicious marinated, roasted chicken has Pakistani influences. “Chargha” comes from the Pashto language and means “chicken”. This recipe is inspired by Lahori Chargha, a soft succulent fried chicken marinated in a spicy rub and steamed first.
We don’t steam or deep fry this chicken, but we do spatchcock and then roast to be juicy and cooked to perfection.
Feel free to use this marinade on other proteins or other cuts of chicken. Just don’t forget to save a little of the marinade to make the sauce!
