I’ve always wanted to make a Bolognese Risotto and love the idea of an “all-in-one” dinner that the Thermomix cooks for you plus it is naturally gluten-free.

This recipe makes a lot of food that the family will love. No-one will know about the hidden mushrooms, carrot, zucchini & capsicum!

If you love a classic spag bol but want something a little different, this Bolognese Risotto with Hidden Veg will hit the spot. It’s rich, creamy and comforting like a traditional risotto, but with all the hearty flavour of bolognese sauce — plus extra vegetables blended in so the whole family gets a boost without even noticing.

Perfect for busy weeknights, this recipe comes with both Thermomix® and stovetop methods, so you can whip it up no matter how you like to cook.

What you will need:

  • 250g beef mince
  • arborio rice
  • brown onion
  • capsicum
  • carrot
  • Chicken Stock Concentrate
  • cracked black pepper
  • dried basil
  • dried oregano leaves
  • garlic
  • olive oil
  • Parmesan cheese
  • passata
  • salt
  • sugar of choice
  • Swiss brown mushrooms (replace with additional mince if you don’t like cooking with mushrooms!)
  • tomato paste
  • Worcestershire sauce

Can I freeze Bolognese Risotto?
Yes. Cool completely, portion into airtight containers and freeze for up to 3 months. Reheat gently with a splash of water to loosen.

What vegetables are hidden in this risotto?
Carrot, Swiss brown mushrooms, zucchini, and capsicum blend seamlessly into the sauce. They add flavour, colour, and nutrition without anyone noticing.

Can I make this vegetarian?
Yes. We have a tested Vegetarian variation in the cookbook. You can also swap the beef mince for plant-based mince, and use vegetable stock instead of chicken stock.

What rice should I use for risotto?
Arborio rice is best, as it gives the creamy texture risotto is known for. Carnaroli rice also works well if you can find it, we found it to produce a thicker risotto result.

Can I cook this without a Thermomix®?
Yes. The recipe includes both Thermomix® and stovetop methods, so you can make it either way.

What can I serve with Bolognese Risotto?
It’s a complete meal on its own, but you can add a simple green salad or garlic bread for a bigger spread.
