Weekly Meal Plan: Inspiration from the Skinnymixers blog 2 Edition!

If you are looking to get organised, eat incredibly well, and keep things simple in the kitchen, you are in the right place. This week, we are diving deep into the Skinnymixers archives to build a menu that is packed with flavour, variety, and absolute crowd-pleasers.

Whether you are craving a cozy bowl of comfort or planning a “Fakeaway” night, this week’s lineup has something for every mood!

 

🍽️ The Dinner Lineup

I love breaking the week down into categories. It takes the guesswork out of planning and ensures we aren’t eating the same flavour profiles day after day. Here is what is on the menu for dinner this week:

A Bowl Something: Mexican Slow Cooker Pulled Pork

Why we love it: This pork is so versatile. We love serving it as a Mexican Bowl—layer it with rice, black beans, corn salsa, lettuce, tomato, avocado, and a squeeze of lime.
Prep ahead: Get the pork cooking in the slow cooker during the day so it’s ready to shred just before dinner.
Freezer friendly: Portion and freeze off the pork for quick protein hit to a meal.

Something Saucy: Slow Cooked Butter Chicken

 

Why we love it: This is arguably one of the most popular recipes for a reason. It’s creamy, mild enough for the whole family, and better than any jar sauce you’ll find.
Prep ahead: This is a perfect “Dump Bag” recipe. You need to double the marinade and marinade as per the recipe. Simply combine the chicken, marinade and sauce ingredients in a freezer-safe bag. On the day you want to eat it, just dump the contents into the slow cooker and walk away!
Freezer friendly: A great one to portion up and freeze for quick grab and reheat meals. 

Something Meaty: Chunky Bolognese

 

Why we love it: You can’t go wrong with a classic Bolognese. This version is hearty, packed with texture, and hides plenty of veggies. It’s the ultimate “safe” meal that everyone will clear their plates for.
Prep ahead: Make ahead and reheat portions as needed. Great for those nights when you truly have zero time to cook.

A Stir-fry: Thai Green Chicken Curry Stir Fry

Why we love it: While traditionally a curry, this works beautifully as a fast-paced stir-fry. It’s a great “fridge forage” meal—load it up with whatever green veggies you have on hand (broccoli, beans, bok choy) to soak up that fragrant sauce.
Prep ahead: Have your vegetables chopped and ready to go in a container.

Fakeaway Night: Aussie Lamb Burger Patties

 

Why we love it: Friday night means burgers! These are juicy, perfectly seasoned, and feel like a real treat without the “takeout hangover.” Serve as a burger or a burger salad/bowl.
Prep ahead: You can roll the patties in advance so they are ready to hit the grill or pan as soon as the weekend starts.


🥗 Lunch Prep Sorted

A good week relies on solid lunch prep. Having these ready to go stops the midday scramble and keeps you fuelled.

The Comforting Soup: Bacon & Vegetable Soup

This soup is a nutrition powerhouse that actually tastes amazing thanks to the smoky bacon. Portion it into containers for an easy grab-and-go lunch that just needs a quick zap.

The Versatile Protein: Spiced Chicken (based on the Blackened Chicken method)

From the SkinnyAmerica collection, this chicken is moist and packed with protein. It’s incredible sliced cold over a salad or stuffed into a wrap with some mayo and greens.

Prep tip – slice chicken as needed to retain moisture.

How To:

  • Chose Spice Mix of choice and cover chicken breasts with spice mix.
  • Preheat oven to 180°C or 350°F.
  • Heat a heavy based ovenproof skillet on high heat and sear chicken for 2-3 mins per side.
  • Place skillet into the oven and cook for 12–15 min or until internal temperature reaches 71°C or 160°F.
  • Allow to rest for 5 mins before slicing. 

🥨 Snack Attack

We can’t forget the snacks! Having a mix of sweet and savoury options ready to go is the secret to avoiding the 3:00 PM slump or for when the kids roll in the day after school before heading off to sport/work/study.

The Sweet Treat: Macachip Cookies

The perfect balance of crunch and chew. These are a fantastic lunchbox addition or a little something with your afternoon coffee.

The Savoury Hit: Pork & Fennel Sausage Roll Filling

This filling is legendary. You can wrap it in puff pastry for classic sausage rolls, or even bake the filling as little meatball bites for a high-protein, savoury snack.


Preparation Tips for the Week: Try to knock out the Macachip Cookies, the Bacon & Vegetable Soup, Sausage Rolls and the Blackened Chicken on Sunday afternoon. You can also prepare spice mix for pork, thai green curry paste, burger patties and butter chicken dump bag. You will thank yourself when the midweek rush hits!
