Skinnymixers Tips

We have seen a few tips in the Skinnymixers Facebook Group to achieve the best ‘ooze’ factor. Follow these tips to get maximum ooze.

  1. Wet your hands when forming the Kievs and make sure they are sealed really well.
  2. Freeze your garlic butter or other alternative filling first.
  3. Follow the recipe and pan-fry first to make sure you don’t over cook in the oven trying to achieve a crispy coating.
  4. Some Skinnies prefer to freeze first and cook from frozen.

These LCHF Chicken Kievs are fantastic to keep in the freezer and cook perfectly from frozen. Prepared in the Thermomix, these Chicken Kievs are gluten free, keto, LCHF and can easily be made dairy free.

Ingredients

Crumb ingredients:

  • 100 g raw almonds - or alternative nut or sunflower seeds for nut free
  • 1 tsp dried oregano
  • 1 tsp onion flakes or powder
  • 1/2 tsp sweet paprika
  • pinch of black pepper
  • 1/4 tsp salt

Herbed garlic butter ingredients:

  • 100 g cold salted butter - cubed
  • 2-3 cloves of garlic
  • small handful of fresh parsley
  • small handful of fresh basil
  • pinch of fresh thyme

Chicken ingredients:

  • 500 g chicken breast - cubed
  • 1 whole egg
  • 1 tsp salt
  • 100 g Parmesan cheese - cubed
  • oil of choice for frying

Instructions

  • Put raw almonds into mixer bowl, mill for 5 sec/speed 9/MC on. Set aside and stir through spices, salt, and pepper.
  • Without washing mixer bowl, put Parmesan cheese into mixer bowl, mill for 10 sec/speed 9/MC on. Set aside.
  • Without washing mixer bowl, put herbed butter ingredients into mixer bowl, blend for 40 sec/speed 5/MC on. Set aside.
  • Without washing mixer bowl, put chicken ingredients, including reserved Parmesan cheese and 20 g or 0.7 oz of the reserved crumb mixture into mixer bowl. Blend for 40 sec/speed 9/MC on.

Assembly:

  • Preheat a frying pan to medium high heat, and oven to 180°C or 350°F fan forced.
  • Take chicken mixture and divide it up into 4 or 6 round balls. Wet hands help with this.
  • Take one of the balls and flatten it out to the size of your palm. Place 1/4 or 1/6 of the herbed garlic butter in the centre. Fold chicken mixture around the butter and form an oval shape - like the shape of a chicken breast. Ensure there are no thin spots so your buttery goodness doesnt ooze out while cooking.
  • Coat the chicken liberally in the reserved crumb mixture and set aside. Repeat the process for the remaining chicken.
  • When all chicken is coated, recrumb a second time.
  • Put oil of choice into frying pan and lightly fry the kievs for a few minutes each side, or until golden brown.
  • Transfer fried kievs to a preheated 180°C or 350°F airfryer for 7 mins, or oven proof roasting tray and bake in the oven for 10 minutes or until done (smaller ones may need a little less time!)
  • Let the kievs rest for 5 mins before serving.

Notes

If you want to ensure your butter doesnt leak out of your kievs, freeze the butter in a cylinder (wrapped in gladwrap) and use it frozen.
If you arent keen on frying, you can bake in the oven for 20 minutes, turning once half way through.
Yes - this can be frozen for a quick dinner - freeze raw! (Bake 180°C or 350°F 25-35 mins from frozen - check after 20 mins)
Experiment with your herbed garlic flavours - for example chilli and ginger for an asian inspired dish or cheese added for a fat boost.
Breadcrumbs can be used as an alternative to the almond meal for those not following LCHF - do an eggwash before crumbing for this.

    I have probably reviewed this recipe previously because I’ve been cooking it for years, but have some new feedback on it. The only time my 3yo will eat meat is in spaghetti bolognaise and in these chicken Kiev’s (or hulk chicken, as it’s known in my house due to the herby green butter). I am so relieved that I can get him to eat them that I now make batches to put in the freezer and cook for him at lunch time (as much as the rest of the family loves them too, we don’t want them every night for dinner haha). My mum even has them in her freezer so he can eat them for lunch when he’s at her house. Such a relief to get some goodness into such a fussy child!

I made a double batch recently but while I double the chicken and butter ingredients, I didn’t double the crumb amount as there was ample there. I am looking forward to making them again soon. Such an easy meal to have with some steamed veggies.

    1. Myself, I would omit the (delicious) parmesan, and use Nuttelex or olive oil spread instead of butter. You’d have to freeze the herbed ‘butter’ though due to the softer consistency.

    I used half almonds, half sunflower seeds and threw in some garlic powder.

  15. Hi. I am big fan of skinnymixer recipes. I tried this last night and loved it. However, my wife was not a big fan of this as the chicken breast was minced. She is not fussy, just prefers less processed meals.
    Would this recipe work okay with a full chicken breast? I realise the Parmesan Cheese would not be incorporated with the mixture however, I have previously used Parmesan in crumb mixture for Chicken Parmigianas which is always delish.

    I made my garlic herb butter from a 600ml tub of cream and froze it into a log – it must enough butter rounds for probably 3 batches, and as a bonus they were super easy to shape around.

After rave reviews was hoping to make this in the next few days, apologises if this seems to be self explanatory but could you please explain how you put the butter in with breast cubed? Ie would they have to be snitzel like pieces? And how does it keep it shape? I was actually thinking of using thighs to avoid chicken from drying out so in this case would I just use 4-6 theighs with the butter? Finally are these best frozen undercooked or defrosted and cooked separately? Thank you very much!

      You only cube the chicken so it minces easier in the machine. ☺

  27. These are so yummy. I’ve made them many times, sometimes using only sunflower seeds for the crust or a mix of almonds and seeds to make it cheaper, and omitting the cheese. My fussy 22 year old brother who won’t like anything if he knows it is healthy or gluten free requested I make these again when he was down here – he would have never eaten them if he knew they were good for him! I haven’t made it past the traditional filling yet as they are so good as they are!

  28. Another thermomix winner!! Surprisingly easy too (I’m the type of person that skips recipes if they have more than four steps!) Hubby loved it as well. I ran out of butter so substituted in natural yoghurt with half as much butter to bulk it up a bit and it was still delish!

  29. Made these tonight. For my Fodmapers and allergy eaters I used Nuttelex and mixed herbs from the garden. I used rice crumbs, mainly because I could not bothered making teh different crumb mixes for fodmapers and allergies. Had to make two batches as one wasnt enough for lunches and serving 5.for dinner.

  30. Finally made these last night and OMG!! AMAZING!! The whole clan loved them especially Miss 14 months. Will be making a few batches this weekend for the freezer. BUT… Does anyone know of anything that can substitute the butter for a lower fat option?? I’m only meant to have 30g of fat per day and I made 7 portions with this recipe and 1 Kiev is 23g of fat 🙁

  31. I finally made these Kiev’s after putting it off thinking it would be too difficult. Was easier that I thought. I always get my husband to give me a score out of 5 when I make a new meal. So far every one has gotten me a 4. Today he was so impressed (blown away) and gave me a 10+ out of 5 and has not stopped talking about them. He actually thought I had given him a very sharp knife because it just slid through the Kiev. He has been complimenting me all afternoon.
    Will definitely be making these again and will try some other fillings as well.

  35. That is “Chicken Kiev” as much as I am Pope John Paul the 2nd. Perfect example of someone who has no idea what the original recipe looks or tastes like. What is even more idiotic is that if you actually DO follow the Chicken Kiev recipe but replace the breadcrumbs (the only carb really in the whole recipe) with ground pork rinds, you got a LCHF recipe. what beats me is why in the world call it “chicken kiev” at all? You invented it, give it a name. It has nothing to do with a chicken Kiev.

    Have used sunflower seeds in place of almonds and it worked out just as good.

  38. The chicken kievs are super easy and delicious. First time I made them as per the recipe, my husband wasn’t so keen on the almond meal. On the weekend I made them with fresh breadcrumbs ( that I had made) and the kievs were an absolute hit. Everyone at the dinner party raved about how moist the chicken was, an awesome meal. I had also made my own butter- garlic butter and sun-dried tomato, garlic and olive butter. I love that the chicken kievs made me appear to be an awesome cook! 🙂

  77. These are awesome, i use panko crumbs instead of the almonds and they are amazing! I could eat them every day!

  78. I made these for the second time tonight and they were even better than the first time. I used thigh rather than breast and whilst it didn’t mince as much, it was moister and the chunkier bits of chicken added nicely to the texture – I’ll always use thigh in future. I oven baked them this time, rather than frying first, and that highlighted the nuts in the coating. I also subbed in some macadamias as I tripled the mix and ran out of almonds. This time I was mindful of not overcooking them and thanks to a comment you’d made on Facebook Nik about the cooking time I wasn’t worried that the chicken wouldn’t be cooked enough and they were the perfect texture. Absolutely beautiful served with pumpkin/sweet potato/cauli mash and buttered greens. Thanks Nik!

    Last time I made these babies I did a double batch of butter, rolled 1/2 in greese proof paper and froze for future use…
    So today all I had to do was slice up my pre frozen butter and assemble using store bought chicken mince for the chicken mixture and breadcrumbs from my freezer.. Dinner was ready in under 1/2 an hour with my newborn awake and my 3year old dancing around my feet. 💜

    I did an asian version with ginger, spring onion, fresh coriander and dinner was gone in 10 mins! I also used 50g almonds and 50g mix of pepitas and linseeds in the crumb!!
    Love the frypan to airfryer step rather than the oven too.

  114. Made these last night. Absolutely amazing. I may have used 2 normal cloves and 1 giant clove the size of 2 cloves so we were safe from vampires last night, I would def cap at 2-3 normal cloves next time in retrospect. No complaints at all, I oven baked for 20 minutes and I was worried they would be undercooked but I had read somewhere to definitely take them out then no matter if they look undercooked and this was correct, they were spot on, juicy and so tasty! I had a fair bit of crumb left so also made the vege nuggets which were a hit with Miss 2. Will definitely be making both again. Thanks Nik!

  115. Well, the verdict from the hubby was “a little too much garlic, but gorgeous”. The children, well, it didn’t reach the table until 630/645 so near their bedtime, which probably didn’t help with getting them to try it! Z ate half a kiev after a bit of coaxing, but L refused! Oh well!

    Next time, I might use panko crumbs for some extra crunch.

    Sooooooo easy to make and I had everything in my cupboard/pantry. I just used dry herbs instead of fresh. I think fresh would be even more flavoursome! All of us loved it – me, hubby, Miss fussy almost-4 and Master 8 months

  130. Yummy. Loved the butter oozing out, gave flavour to the noodles that I served them with. Master 7 ate it all up, so did fussy miss 6.
    I added broccoli purée to the mix and left the egg out to do an egg wash as I was unsure whether in or out and thought with purée wet anyway. I ran out of crumb coat so added some of my kfc coating to the mix.

  159. We had these LCHF chicken kievs tonight, they’re amazing! I crumbed mine a few days ago, froze them on a baking tray then once they were frozen put them in a big zip lock bag and back into the freezer. I then defrosted in the fridge overnight and they’re pretty great! Oh and also I forgot to put the egg in the chicken mixture so I just dipped the chicken ball into the egg before the crumb mix.

  173. We made a dairy free version last night and they were delicious!! I actually used macadamia nut butter for my garlic butter and it was Devine and they stayed together perfectly.
    We put bread crumbs on the outside instead of almond mix, I just added the herbs to the breadcrumbs!! The whole family really enjoyed this meal, thanks for another wonderful recipe!

    Used thighs as I prefer them, added large handfuls of herbs and oven baked them..
    I made 6, hubby ate 2, so there’s 1 for his dinner tomorrow night while I’m away and 2 into the freezer uncooked to see how that works.
    I flattened out all 6 batches of the mix on baking paper, then added the butter to them then shaped and rolled them in crumb mixture..
    I also refrigerated them for about 4 hours before cooking.
    Will definitely be a regular, especially if they freeze well and cook from raw.
