Coconut Curried Sausage Thermomix Rice

Coconut Curried Sausages is the first Thermomix recipe I ever “developed”.

Now, I had never heard of curried sausages in my life… so I jumped on Google and browsed about 100 recipes.

With this concept in my head that it would be creamy and coconutty… only to find it was more of a tomatoey dish with supermarket curry powder in it. PASS!!!!

This Thermomix recipe is really delicious, but more of a comfort meal in the Skinnymixer household. 

I converted it to Thermomix a few years ago and whenever someone asks for a curried sausages recipe, I find the original version raved about. Usually we do it with frozen peas, but I didn’t have any on hand so chucked in some baby spinach – which we actually now prefer.

Why Malaysian Style Curry Powder?

Personally, I’m not a big fan of Keen’s. This Coconut Curried Sausage recipe was developed with Babas Malaysian Meat Curry Powder, since then I have released my own Malaysian Style Curry Powder that I prefer to use – it also means you can make your own with supermarket ingredients instead of needing to find a shop that sells Babas! 

This curry powder is an aromatic Malaysian style Red Curry Powder and is very different to Keens or other commercial curry powder. Remember to reduce to 1-2 tsp if using a different, spicier curry powder.

Coconut Curried Sausages

These Coconut Curried Sausages are a Skinnymixers Classic! Super budget-friendly and delicious.

Ingredients

  • 1 small brown onion - peeled, halved
  • 30 g butter or oil
  • 1 kg thin beef sausages - we use gluten free or grain free when available
  • 300 g basmati rice - use half for tray bake version
  • 1-2 Tbsp Malaysian Style Curry Powder - OR Babas meat curry powder
  • 2 Tbsp Stock Concentrate
  • 850 g water - 850 g | 30 oz liquid stock instead of water & stock concentrate
  • 60 g tomato paste
  • 400 ml tin coconut cream
  • 200 g frozen peas or baby spinach

Instructions

Thermomix Method

  • Place sausages on deep steaming tray, in a layered up ladder style to allow for air flow.

  • Weigh rice into the simmering basket and rinse well.
  • Put the onion into the mixer bowl, chop for 2 sec/speed 6/MC on. Scrape bowl down.
  • Add butter and cook for 5 min/100°C or 212°F/speed 1/MC off
  • Add curry powder and cook for 1 min/100°C or 212°F/speed 1/MC off
  • Add water, stock concentrate and tomato paste to bowl. Put simmering basket with rice in place. Put the steaming tray in place. Cook for 20 min/steaming temperature/speed 4.
    Periodically stir rice up with spatula while cooking.
  • Remove sausages. Remove rice to a thermo server to keep warm. ** do not drain liquid, keep it in bowl**
  • At this point you can choose to peel the sausages and then slice them as preferred.
  • Insert butterfly, add sausages coconut cream and peas to bowl. Cook for 8 min/100°C or 212°F/reverse/slowest speed.

Tray Bake Method

  • Preheat fan forced oven to 180°C
  • For the tray bake method we halve the rice to 150 g & use coconut milk.
  • Add sliced onion (fry onion if you prefer), tomato paste, curry powder and coconut milk to large deep ovenproof metal pan mix to combine. Once combined add in the stock concentrate and water and stir through.
  •  Add in pre-rinsed rice to the sauce in the pan. Then evenly place sausages in the pan.
  • Transfer the pan to the oven on the top rack and cook for 30-40 mins. If your dish is not metal it will take longer.
  • Add in peas into the pan in the last five minutes of the cook time.

Notes

You can omit the rice for grain free, and add extra veg to the steaming trays if you desire... just use only 500 g or 17.6 oz water.
The quality of the sausages have a big impact on this dish, you can substitute chicken breast or chicken thigh utilising the same cooking instructions. It is also popular with chicken sausages or sausages cooked on the BBQ instead of steamed.
The sauce is a runny sauce which is soaked up by the rice for extra flavour.

Bellini Users
Use the blunt blade for this recipe.
At step 4 you may need to increase the onion cooking time.
At step 6 if using an Intelli place a tea towel over the steamer lid, use speed 3 and increase cooking time if required. If using a Supercook please use speed 4.
At step 9 DO NOT use your butterfly and be sure to use speed 1.

  4. Love the flavours but did run into an issue with the recipe instructions. Are you meant to cool the rice with the sauce in the bowl?

    The rice did not cook properly and the sauce covered the rice.

    Had to cook rice separately. What am I doing wrong here?

    1. Either or. I sometimes add the rice to the same Thermoserver as the sausages but, only if I know I’m not going to have leftovers as the rice absorbs the liquid. I mostly leave the rice in the steam basket & place the basket into the round Thermoserver (less clean up). That way I can serve rice then sausage mixture over the top. Hope this helps.

    Delicious! Next time I’ll put 3 tablespoons of babas powder.
    I notice a lot of comments about the dish being watery- don’t worry. Just mix it with the rice when you are ready to serve individually in the bowls and it will thicken perfectly and the amount of sauce is perfect.

    I enjoyed this meal! My family however did not like it at all. It will be made again but with a little less coconut and a little more curry. I was happy, had freezer lunch meals for a bit! So will be tweaking to suit my family.

    This is delicious! I do oven bake and a family of 7 so add double the sauce and extra sausages with a bit of garlic, carrots, onion, peas and baby spinach and love it!! The flavours the next day as left overs even better 😄😄😄

    This recipe is divine but it does make a huge quantity for our little family. Can it be easily halved?

  21. Ok, so I’ve tried the tray bake a few times, and the rice always comes out soggy and overcooked, but I have to cook it for another 20mins in my convection oven otherwise . What am I doing wrong? Am I still meant to put in the 850g water? HELP!

Hi Shelby, we cook this regularly but I cut baby potatoes up into small cubes and roast them with a combination of Lemon infused Olive oil and Sweet Hungarian Paprika and add them just as I serve, now that’s a DIVINE meat alternative & every time I’ve served it even as a side dish with friends and family I’m asked for the recipe! 🥰

    This was the first Skinny recipe I made and still a family favourite. I cook the rice separately though as while we loved the flavours, the first time the curry was a little strong for me and the kids. I also thicken the sauce with a bit of corn flour and add a heap of steamed veg as well. There’s usually enough left for 1-2 lunches for me – if I hide the leftovers!!

  30. If adding the veroma on top to cook veg, you may find the rice needs longer. This was certainly the case with brown rice instead of white, set to 27mins to allow for brown rice to cook. We needed to add a bit of extra water mid cook when we stirred the rice. And also cooked for an additional 10mins at the end. Then added the meat etc for 8mins.

  32. Hi. My rice was still crunchy at end cook time, had to put it in the rice cooker to finish it off. Always happens with all in one meals in thermy. What am I doing wrong?

    1. did you cook it for the full 20 minutes. I did Risoni the other week but took it out before the full time was up. After about 12 minutes from memory.

  37. A perfect meal for those nights when I get home late from work. My 7 year old rates this in her top 3 all time fav meals and she’s a bit of a foodie. I love How much this makes, plenty of left overs which reheat really well.

  38. If made using ingredients listed it might be ok, but thermomix has people believe they can make ingredients from other ingredients for cheaper (eg coconut cream from desiccated coconut) and it taste like crap.

    1. The default coconut milk/cream used in Skinnymixers recipes is the ayam brand which is thick. I do make my own coco milk for baking and smoothies.

  39. How much Babas curry powder does everyone use? I haven’t tried the powder yet so not sure how bitey and strong it for my 9 year old who doesn’t like heat.

    Made this coconut curried sausages tonight and omg absolutely AMAZING But unfortunately it has stained the lid/seal for the thermomix 😩 (Well my sister in laws thermomix) do you have any tricks or hacks to remove the staining? I have tried hot water, vinegar and lemon but nothing is working 😫

    1. I have the same problem when cooking rice, I’ve started adding an extra 300ml (or thereabouts) of liquid & making sure I give the rice a good stir first getting it all wet.

    2. I have cooked this dish 5 times and every time it’s turned out great. At the half way mark of the cooking, stop the thermomix and give the rice a stir. As I said, it works every time.

    Yes it is quite saucy/runny, but I like it like that, with rice.
    It is mild enough that my young kids will eat it 🙂 and obviously, you could spice to taste.
    We just add the baby spinach, and I use Clive of India curry powder, Yummy!

  49. Hmm, we’re feeling quite underwhelmed by this dish. I’ve been excited to make it (after so much hype & rave reviews), got my hands on the Babas curry powder…and yeah…the dish is bland, kinda nothing-y. Too watery. Followed the recipe to a tee, just wondering if maybe I somehow stuffed something up. Hubby & I aren’t too impressed 🙁

    1. The quality of your sausages can make a huge difference to overall flavour, also ensure you use homemade chicken stock paste…..veg stock just doesn’t hive enough flavour…hope this helps ☺

  53. Another cracker! I had 500g of leftover sausages and cooked another 500g as per recipe. Didn’t have peas or spinach so steamed some sweet potato and broccoli on the top tray for the 20 mins and added with sausages to bowl for 8 mins. Thank you again for making my dinners so impressive!

  56. Well, I must say, despite all the reviews I didnt think I was going to like this as I too am not a fan of sausages. However, the flavours in this dish are so yummy, it completely turns the flavour of sausage not only into something more than edible – actually something really good. It dooesnt look great but try it…it’s so quick and easy.

    I omitted the peas and added steamed carrot and pumpkin. I also added a bit of honey for sweetness and corn flour to thicken as I added coconut milk instead of cream.

    1. Tried it with rice and quinoa – didn’t cook the rice believe it or not… Tried for 40mins to cook it, no luck. Threw it out and cooked quick packet rice to serve

      1. Same here. I used brown basmati rice which usually takes about half hour on the stove… i still wanted the yummy flavours that it had already absorbed so i put it on the stove top with extra water… will have to have another go to get it right next time..

        1. I find you really need to soak brown rice for at least 1/2 an hour before cooking otherwise it is seriously undercooked & the edc recommends cooking brown rice for 40min, hope these tips help ☺

        2. I used brown basmati too and just cooked it for 25mins like the packet instructed (instead of 20) and it worked perfectly.
          You must stir the rice a couple of times like the recipe states.

  64. Thanks Nik, this meal was amazing. So easy to do and so forgiving for ingredient substitutions. I used one tomato from a tin of whole tomatoes (didn’t have tomato paste) only had about 300g of coconut cream and pimped it up with carrots and mushrooms as well as the peas.   67. This was Ah-mazing!!!! Curried sausages is an old favourite and this surpasses the bottled stuff I used to make pre thermomix. Just loving cooking now I have my thermie. This made plenty but I had about 1.2kg of sausages. Wasn’t sure how I’d go with the coconut sauce as I’m not a huge fan but it was perfect!! Will become a regular meal!!

  68. I made this tonight. Used pork sausages and added carrot, potato and beans instead of peas or spinach. Think I might be the only one that says I needed more sauce. Just enough to serve 5 but none now for any left. Next time I will add more water. But everyone loved it.   69. Wowser! I used one of the microwaveable brown rice packets .. I also did not read the recipe notes until too late .. So the runny sauce was, well, runny! And lots if it 🙂 absolutely Delish, now going to be one regular dish as it gives us dinner and a couple more for the freezer 🙂 have to be happy with that!! And notes to self .. A lot less water required if you’re not doing rice .. Congrats Nik, you’ve done it again.

  70. So good!! I swapped the rice for 600g sweet potato and cooked as per recipe. Once done I put the sweet potato back into the bowl and finished as per sweet potato mash recipe

  71. I make these with Kanga Bangas (Kangaroo sausages), to increase the iron, and decrease the calories (Kangaroo is a very lean meat). I make this every week, because the whole family (including a three and one year old) love it! Thanks for a fantastic healthy meal the whole family can enjoy 😉

  74. Curried sausages is an easy and delicious meal. I’ve cooked it several times now and I still enjoy it. This time I added potatos to the steaming tray then added them to the bowl with the sausages. Towards the end I then added some zucchini for some green. I didn’t have any peas or spinach. Then once finished I added coriander to the rice and curried sausages. Thanks for another great recipe.

  75. Definitely think the sausages make all the difference. I used cheap ones and they really let the dish down. Will try with better quality ones (or perhaps chicken!) next time. The sauce itself was incredible so I just ate around the meat 😉 Kids loved it regardless!

  84. I live in a household of 2 people, I’m a vego and my daughter hates sausages. So I made the sauce in thermy as per recipe, then just fried vego sausages in one fry pan and normal sausages in another, then chopped the sausages and poured the sauce over the top. It was such a tasty dish, my daughter even ate it and loved it. The recipe made heaps, so I have frozen the extra for nights when I’m at work, it’s defrosted beautifully..

  87. A very tasty simple dinner. I have made it with fresh sausages as well as with leftover BBQ sausages. Both worked great. Very popular. I always have leftover curry flavoured rice and we make a beautiful fried rice from this. So good too.

  88. Second time I have made this and I have to say we love it!! It’s nothing like the curried sausages we all know. My partner usually hates dishes like this but it’s now one of his favorites! I use both spinach and peas and it gives it the freshness curried suausages need, I also only use the one tablespoon of curry powder, it’s plenty for the kids and still a lovely flavor ! It’s even better the next day 😀

Delicious and not greasy at all (which is my lasting memory from childhood curried sausages). I halved the rice and still found it more than enough and it was even better on toast for breakfast.

  96. Like most Aussie kids I grew up with curried sausages as a weekly meal… Hated it! So I was very sceptical about trying this. Lo and behold it was beeyootifull! I replace the rice with quinoa, as I had run out of rice, and I suspect this is the only reason why my curry and rice loving 2.5 year old didn’t eat it, but my partner and I both loved it. Do yourself a favour all you curry snag haters out there, and give it a whirl!

That is amazing considering the minute I left home at 16, I vowed to never ever eat curried sausages again due to the fact that we were fed them as kids and they were AWFUL. All you curried sausage hating people better give these a try before you write off all curried sausages.

  100. Really beautiful flavours in this easy to prep meal, and I love that the majority of ingredients are ones that I have sitting at home anyway. Another plus is that you have a good chunk of time whilst the sausages are cooking away to clean up the kitchen, organise kids etc- another winner in my books and a fave for the hubster!

  111. Yummy! Was a bit skeptical at first as the curry was a tad spicy but once it hit the plate both my boys and hubby gobbled it all up licking their plates. We don’t have sausages often so next time I will try with chicken or prawns. The rice was a little spicy for 4yo but he said it was delicious that it didn’t bother him too much.

  122. This was delicious! Halved the whole recipe except for the rice (I used 1 cup) and it still worked perfectly. However, I cooked my sausages in a frying pan as I prefer that over steaming/peeling. I also only had coconut milk (I think the recipe has been changed since I went shopping for ingredients, lol) and it worked fine.

    Next time I would make the full amount of sauce and rice, but still only use 500g of sausages to make four or five full meals.

  123. Oh my gosh. Yum. I misread the instructions and had to remove rice and strain off the coconut milk. Lol. And it was still delicious. I wonder if the sausages would successfully go in the basket once the rice is out. To ensure sausage integrity. But all in all. WOW. we will definitely make again.

  143. And finally it’s blogged! This comes up on our menu at least once a fortnight because it is such a fanatically low budget meal. I’ve been cooking this since its original version (I think I may have even been the first to convert it for a slow cooker), and it’s been family favourite since.

    I’ve never been able to cook rice properly in the Thermomix, so I always do it in the rice cooker, but it’s one of the few meals my kids are guaranteed to eat time after time.

  145. Thank you for such a very yummy recipe. I most often replace the rice with sweet potato in the steaming basket. Using Babas meat curry powder is essential! This makes all the difference.
